you need the belt relaxer spray... it loosens the belt up for a few minutes to let you stretch it over the pulley...

Coming from a mechanics perspective you may want to rechange that belt. I don't know if you noticed when we watching this video and editing it, but you actually put a small tear in the belt when attempting to get it over the alternator pulley because you didn't release the tension from the tensioner. You've now unfortunately created a weak spot in the belt that will be prone to tear further especially in the spring and summer season when the temperatures are warmer and the belt softens.
