Looking @4:07 The light is shoiwing you you have a greater effective cross sectional area on the center of the cylinder side of the bowl. The bowl on the cylinder wall side seems to have a smaller effective cross sectional area. You can see the tight reflection and next to it a sharp contrast with much less light, that's telling me there's no airflow in that region, it's effectively a dead zone. The only path for air to travel is on the far side, basically just follows the light. That's why it's fast compared to the other side, smaller CSA more air speed.

I have a slightly used set of the Ford original GT-40 replacement valves that I removed from a set of heads and set on the shelf for about 35 years. They were sold through the Muscle Parts program at Ford, and I installed them in a pair of 351 heads, but decided to go with the 1.940" valve instead. They do have the 30* intake seat, but the exhaust has a 30* back cut. Interesting to pull them out and look at them after all this time.

Thanks Charlie. And I am a GM guy. I was at my buddy's shop today and his has some Ford Profiler Chad Spiers heads in to freshen up. They look awesome and have a Burr finish on the intake ports. Small cubic inch engine going in a asfalt circle track modified of all things.
