I agree with you on the kocsonya, but I have to disagree on túrós tészta. My dad used to make it with fried bacon AND sugar, and add a little bit of sour cream. I know it sounds gross, but you won't regret it.

Everybody loves Turo Rudi. You can actually make it with Farmer's Cheese (that's Hungarian Turo). You can find some good recipe on here. Pig jelly is called Kocsonya and real Hungarians love it usually when they get older. Just like pig feet stew....😊

Im pretty sure guest rights and hospitality is well alive in all traditional cultures tho (just think of "southern hospitality"). It's just ppl in the Anglosphere mostly lost it in the last 100 or so years. It's coz how traveling used to work: People who come to your house were: your relatives, wandering monks, preachers and bards/singers/story tellers that would either entertain your household or give you teachings/blessings/spiritual brownie points, or traveling merchants that you might wanna do business with... You can see how it would make your life easyer if you made your guests happy, so as a minimum you would offer them food and rest. As an "appendix" violation of guests rights on either side were punished harshly back in the day. Many Hungarian folk tales teach you that a good host will be rewarded lavishly. Whether the guest is an angel of God, King Matthias in disguise or a lone hussar on the way home, the "good host" is rewarded by blessings, royal riches or some great luck caused by clever wit... Nowadays it's just good manners to offer a drink that quenches thirst or invigorates (coffee/tea) and a few little bites.

You know why the hungarian food is so heavy? you have to drink a Palinka after /fruit spirit/ for the tradition and its eases your stomach :D but do not drive we have 0 alkohol tolerance.
