RECIPE...
www.omnivorousadam.com/allrec...
Strawberry Kvass, a refreshing fermented beverage, carries with it a sense of time-honored tradition and a punch of bright, berry flavor. Originating from Eastern Europe, Kvass is typically made with rye bread or beets, but this strawberry variant brings in a sweet and tart profile that's perfect for those warmer days. Strawberries, those summer gems, are the star of this recipe. We're talking two pounds of these juicy red delights going into a brew that's nothing short of a fruit lover's dream. And it’s not just a wonderful beverage, it’s an experience. Watching the strawberries releasing their ruby-red juices, seeing the bubbles of fermentation, smelling that sweet aroma-it's all part of the journey.
Now let’s talk about the magic of fermentation. We've got sugar, the fuel for fermentation, dissolved into water, and then poured over the strawberries. It's as simple as that. And what follows next is the most beautiful thing: we stir the mixture thrice a day, getting in there, agitating everything, helping the fermentation along. Over 3 to 5 days, you’ll watch as the natural yeasts get to work, turning that sugar into slightly fizzy, deliciously tart kvass. It's a bit of patience, a dash of magic, and a whole lot of flavor payoff. Remember to pour yourself a glass, kick back, and relish the tangy, fruity goodness of your homemade kvass. Here's to the joy of fermentation and the simplicity of ingredients coming together to create something special.
P.S. Try this out with your favorite fresh fruit, too. I really dig strawberries and pineapple. Get creative. 🤘🏼 Adam

You can most certainly make fruit kvass....it's not uncommon for families to make traditional and other varieties if kvass, including fruit, beet, and technically mushroom (it's really kombucha, but my inlaws call it kvass, so that's what I call it too). Hell, you can buy fruit kvass from Russian stores and (mostly) internationally online. And I'd more compare this drink to a fizzy, low alcohol content: kompot, mors, thin vzvar, fruit incorporated medovukha, or, ya know, just fucking fruit kvass, specifically melon berry kvass.

Technically kvas is made only with (black) bread crumbs and sugar (but that takes more than 3 days). Nowadays special bacteria are added to speed up the process. My grandad used to make his kvas each summer, very tasty. It has a faint beer-like taste but way sweeter, tangier and no bitterness. As others said, what you did is braga.

Calling this kvass gave me, a Ukrainian, a stroke. Kvass is made from rye bread. It's not fruity in the slightest, it's strong and overwhelmingly earthy. This is like a compote which you're too cheap to boil. Calling this kvass is like tossing some cucumbers in rum for a week and saying you just made lemonade.

Actually this indeed is KVAS. Even though classic Russian kvas is made from rye bread/flour, kvas can be made from other grains, fruits and berries. To each nation kvas is made differently. The name refers to “fermented” process. Kompot is usually boiled, steeped and cooled fruits/berries, which can also be canned for winter and is NOT usually fermented. It’s more like juice.

Although I know it's sketchy and I won't drink it, fermented fruit drinks make me feel a hint of nostalgia. When I was a kid in the 80s in Vermont, community centers and after-school programs and girl scouts would get the same donations that the local emergency food pantries got. Being in Vermont, that meant there was often apple cider. It wasn't until an event when my mom went and she heard us say the cider was prickly and she tried some, did we find out us kids had been inadvertently drinking hard cider for some time! 😅
