My favorite mushrooms. I buy a box whenever I see it in Costco. The price has gone up a lot this year. Last year it was $12/lb, now It's $17 per lb. I bought 2 boxes so far this year. I never thought to freeze it. I am going to try that. Thank you.

Just go to a local public hardwood forest after heavy rains and look for beech trees, black cherry and poplar/Aspen. They grow here in MI from middle of July to the beginning of September.

Wow! Chanterelles are my favorite. I thought Chanterelles in Costco was only available in California, Oregon and Washington. Good for you Colorado 😁 They are usually available from October to November. Once they are placed for sale, sells out out quick. from my understanding, this is harvested from wild so, how are they able to get so much?? I bet some guys or gals in Washington knows the secret spots. I usually, slow cook chanterelles with scalloped potatoes in salted butter, extremely low heat, add salt and little bit of oregano. It goes so well with any steak. Just cook covered until potatoes are softened. Another item that shows up at Costco that is extremely popular is German Beer called 'Bitburger Festbier' that only show up during early October. This item is so popular, grown men are fighting over them. this year my COSTCO received only 8 boxes.

I don't know for sure how they are harvested plus harvest enough for the supply chain across the country. I would get them in Houston as well. However it is, what a treat!! My husband is a brewer and we follow the beer at Costco too! Thanks for sharing your recipe. I did research the company that provides the chanterelles last year. They do just supply specialty foods to restaurants in the NW so we are lucky to get them! Cheers!

Learn about when to pick chanterelles in your area on your own! Almost every state has them, normally a late summer to early fall mushroom. Next time sautee them in butter, make a light alfredo sauce with butter, whipping cream/half n half, then add shredded parmesan cheese to thicken- add sauteed chanterelles then pour over a quality toasted bread. DIVINE and super easy!

Freeze them after. I drain them, then portion out on to Glad Press N Seal, then seal tightly. They last easily for months - if you don't eat them before then! Enjoy and thanks for taking time to comment!!

Tip: don't slice chanterelles, but tear them apart in chunks as big as you like.

Occasionally some from Costco are pretty "weedy" with forest trash. I try brushing and wiping but sometimes a little water helps!
