Nice looking shrooms! I've learned to saute them down over lowest heat possible, with no lid, until the water cooks out of them.... then I bag and freeze. This preserves the taste and nutrition that high heat and over cooking can destroy.

I peel them into thinner strips, air dry on screen till mostly dry, finish drying in salt til crunchy, grind. Chantrelle salt. Gravy,beef,soup,chicken add just a bit

We had an Alco store that closed earlier this year.. During their going out of business sale, I bought a Food Saver vacuum sealer. I was surprised that when I first used it, it would not seal the strip on the first time. I have to do the same thing you do with yours. I thought I might have been doing something wrong, but I see you have the same little problem. lol. Always something. lol Good video man.

Thanks for the video, I'm new to Chanterelles in particular, and found quite a lot of them out hunting this year. Still finding them actually! :) Was wondering how to store them, as I heard that simply drying them like I would do with Morels loses some of the flavor. I'm surprised at how much they actually cook down like this, but it's nice! Thanks again!

hmmm...when cleaning them do strips...when cooking them just a few minutes..drain water..add butter..a lot of butter..do not overcook..very short time..add to an ziplock freezer bag..and freeze them... it is the only way ive found that they are crisp..like the day you picked them...like this, will keep a lil better than 3 months...

Thank you a million! I live in Finland and last year I picked around 4kg of chanterelles. I tried to freeze some while still in raw state. They turned bitter :(. Also another method i tried was to boil and put them in jars which ruined them too. I had to throw them all! :'( I will try your method next year. I hope there are no disadvantages to it. So I just defrost them and put them immediately in food?

Nada Touma Yes. you can also add any spices you like when you cook them down and freeze them so they have whatever desired flavor you want

Been a dry summer here in the mid coast of Oregon but we got rain!!! Found 20+lbs of chicken where I have been getting chanys for three years!!! Be careful and do your research or go with someone that knows where to go and what to get... jus say'n
