Ladies you are speaking my language! I work hard at my job and all I want at the end of the day is a tasty, fast, frugal and healthy meal. I am Celiac so options other than homemade is tricky but the last thing I want to do when I get home is cook. So, by taking some time on the weekends I have built up quite an assortment of meals in my freezer and every couple of weeks I make another recipe or two to help replenish and keep the choices fresh. Thanx so much for this, definitely gave me some new things to try.

Just an encouragement for some who want to do this on a smaller scale or are not used to cooking for 1: make your favorite meal, eat 1 serving for dinner and then package up the rest to eat in a week or so when you crave it again.

This is key! I just make it once and freeze the rest. I have two teens and we are often on crazy schedules. This means we always have something yummy in the freezer on those days when we all have to eat at a different times.

I really appreciate these videos being a cooking for one person! I keep my freezer full. But I’m looking to buy a new house, so I am hoping after this month I will have enough to last me and my neighbor as needed for a while so when I move pretty close to across the country I will not have to empty my freezers.

You two ARE a couple!😂 That Tomato Soup looks delicious on its own, maybe add some rice?😂 I guess I would heat it up and add some small minced meat meat balls to simmer in it! My son is great in making those small 1 cm meatballs for puréed soups. An other way to make it a meal would be adding some tortellini from the big batch bag! and some cheese! My dear MIL has a small kitchen and refuses to add a bulky microwave, so (one) pot/pan stovetop reheats are my way of helping her out! Loved that show! Excitedly waiting for your next …

For your MIL: Dollar Tree (and other retailers too I am sure) makes disposable take home pans with a cardboard top. Then you could make her freezer meals and she can put them in the oven to reheat.

My husband is going on deployment, and currently, he is gone for a month for annual training. He comes home for 10 days, and then he is gone for 15 months. We do not have children, so I have no one to "cook" for, and I am not good at cooking just for two when he is home. I want to eat well and stay healthy while he is gone, but after taking care of the animals and the garden and working 8-10 hours, I find myself just eating cheese, apples, and crackers every night. Thank you for helping me get out of this rut! Honestly, this was the last thing I thought about...food for me, LOL

They look like the same container you can buy at Walmart. They have square and round ones. Not sure if there is a price difference between 5hem and the ones on Amazon. But they are fairly cheap at Walmart.

You can use whatever you like. We often prefer to put soup in quart sized freezer bags. The containers we use might not be leak proof for soup if they get tipped on their sides before freezing. Make sure it's sitting flat until it's frozen at least. They can be used again and again which is nice. They can go in the dishwasher. You can heat them up from Frozen, but they will take a little bit longer. Of course. I prefer to thaw mine first because they reheat a little more evenly.

Question: After cooking and everything is in the container, Do you let the food cool and then store in the freezer OR add to container hot and seal and freeze? How long do they last in the freezer? im only 8 min in so you might answer this later but thought i would ask incase i miss it? Any advise anyone can comment please.

You want to allow the food to cool and then store it in the freezer. We usually prep our ingredients the day before so for us, they're already cool before adding to the containers a lot of the time. If you add them to the freezer when they're still hot, you'll get condensation in them. They last about 2 months in the freezer in the reheatable containers but 3-6 months in the freezer in the freezer bags.

When I cook rice and later, freeze it and then try to thaw out it becomes very mushy and watery. How do I prevent this? I do rinse my rice before I cook it and I just use the every day great value long grain white rice.

This happens to some people and I'm not sure why. It has never been a problem for us. I know with mashed potatoes, if you just keep mixing and heating, the water will incorporate back into the potatoes, but that won't help with your rice being mushy. Maybe par-boil your rice? Like cook it for 12 minutes if you normally cook it for 15? Might be worth a try.

@@FreezerMeals101 thank you so much what I’ve been trying to do lately is actually cook the meat and vegetables separate and throw them into their containers and then do mini rice and then add it to the dish since it only takes a few minutes to cook that way I still have my single portions. I have three teenage children in my house, but due to my dietary restrictions I have to eat my meals as though I’m a single person lol my husband is into fitness and he is bulking up so his meals are much different than mine as well, so thank you so much! I’m looking forward into jumping in into your membership here shortly because I eat as though I am a single person even though I have children and a husband and for Chihuahuas in my house

Yes you can! You would need to package your sides separately or make the sides on the day of serving but they all would work in freezer bags. If you're doing single or double serving sizes, then we recommend the quart sized freezer bags. Be sure to get out as much air as you can before sealing.

It depends if you are watching on a phone or a computer. If you're watching on a phone, under th video, you'll see the video title and date and then "more..." - click on that "more..." If you're watching on a computer, it will be under the video, under the title. It will give a few lines and then show "more..." and you'll need to click on the "more..." Years ago when I started making these videos, I couldn't even find the description on my own videos so it's not just you!

Please do not call your "fried rice" fried rice. Its just offensive. To make fried rice, it has to be cooked on high heat together. You make mixed rice.

I guess we all have different definitions for "offensive". 😂 For this same recipe when cooking it in a larger size, we do actually cook it over high heat for reheating, so it does meet the definition of fried rice, but yes, agreed that when heating in the microwave in this single serve form, it does not meet that definition.
