What I noted in France is that moderatly priced restaurant often serve notoriously worse food as compared to other European countries. Now I imagine that there are wonderful and very expensive restaurants in France but shouldn't "gastronomy for the masses" be what really matters ?

You just don't understand France. Nobody goes to Paris for a gastronomic experience, for that you go to Lyon, Bordeaux, Marseille or two thousand other places. Or even to Belgium - which in many cases is a safer bet.

Nah, you simply go to the tourist traps. Simply ask the locals where to go and define moderately priced please?

@@puccaland I live in France since 3 years now, I probably managed to avoid tourist traps, at least once. My verdict is: moderatly priced restaurants serve rather worse food in France than in other places in Europe. I was quite impressed by the food in the Baltic countries for example. Simple but excellent products and way more work involved in preparing food than in France where you often come accross food that are merely warmed up food restaurants buy wholesale in special "restaurant" food providers. By moderately prices I mean diner for less than 70 EUR for 2 persons. I have traveled quite a lot, Italy, Spain, UK, Netherlands, Russia, Sweden, Baltic countries and I would say: Sweden, Netherlands, UK: dull food. France: generally overhyped, probably good in super expensive restaurant and regions far from Paris (south west for example, Bordeaux and further south). Baltic countries: simple, cheap, above EU average. Italy: a bit like France but ingredients are usually a bit better. Spain: a bit dull at times but rather good value for money and often much better service than in France and Italy. Russia: I just tried Moscow, for such a vast region I would not pretend I know anything. USA: a bit like UK, better than what people think but you need to be in rather sophiticated places (east or west coast). Present best for me: Baltic courntries.
