Fresh bendi harvesting at field& cooking | Tasty local ladyfinger recipe | ಕಾಯಿರಸ | Bende kayirasa
Ladies fingers are used to prepare a curry called "Kayirasa" which can be combined with rice. The spices required are dry red chillies and urad dal. This curry doesn't require any lentils. But we need to add enough grated coconut. Red chillies and urad dal are fried in little oil, then ground with grated coconut. A tip can be followed to prevent the slime in ladies finger pieces while cooking is also mentioned in the video.

Any souring ingredient stops the mucilage from leaching into the rest of the curry. Here tamarind has been used. Aamchur has the same effect. Also delaying the addition of salt allows the vegetable to fry or cook without becoming slimy.
