My mom is from the south and she does this too... a tip is to add baking soda to the collard greens while they are in the water...This helps get the grit off faster and easier.

Thanks for sharing your talents and skills! I totally wash my greens the same way, just feel the bottom of the sink until there is no more grit. I find mustards take the most times, sand just wanna hide in those curly leaves! I too hate those big stems in the package greens. There are a couple restaurants that I can tell are using them now, cuz there they are in my order! I get it, it’s more convenient, but ugh! I have NEVER seen sliced ham hocks before, that’s so cool! I’m a Yankee, so that’s gotta be a southern thang!

John great recipe for collard greens, I use one that is similar. I am going to use Better than bouillon garlic next time. I had not heard of the Ham hocks/butts with most bone removed. I am going to look for that here. Have a Happy New Year!

First, I really enjoy your shows. I discovered Better Than Bullion A few years back and our Kroger stores carry it. So much better than cubes. Now I’m looking to try making powdered bullion. I have the Ninja Dt2011. Between it, an instant pot, and full sized gas oven/stove we can cook up a storm!

I love the stems in the collards just like I love the core of the cabbages. It is the best flavor. If you cook the stems and cores long enough they will be soft on the teeth and pallet.
