So I've made this recipe twice now, both times halving the recipe, and both times using blueberries. Both came out great, but the first time I didn't think that the filling puffed up enough. So the second time, instead of just one half of a scrambled egg (measured by weight so yes it was accurate), I used half of an egg yolk and the entire egg white, which I whipped up with a whisk nseparately for a minute or two before combining with the butter/sugar and the dry ingredients, and it was AWESOME. Much lighter, airy texture, made all the difference in the world. So I'd highly recommend that. Also is excellent with blueberries, as suggested by Chef John (from FOOOOOOOOD wishes dot com).

Damn. From the thumbnails/first images, I thought it was a pastry filled with jelly, and that the cooked almond paste was just more pastry. I was like, "wtf that's just a long danish what's he on about." This is much cooler.

Hi Chef John! I'd like to share with you one of my family secret when making the frangipane. To enhance the almond flavor we use couple drops of bitter almond extract. Here when making galette des rois it makes the difference between a good one and a memorable one. Give it a try!

Chef John, I would really really like to see you make a recipe using dandelions. Apparently, the entire plant is edible. I’ve heard of salads using the greens, with lemon and oil, as well as tea from the flowers. I’m sure you could do even more and would love to see you creatively use them in a recipe and share with us who are to scared to consume it themselves. Lol

I made this recipe today. The package of puff pastry comes in two sheets. I used one for the bottom, the other for the sides. It puffed up like an inflatable swimming pool, and even after I fixed it after baking, the side flipped outward after the second baking and I couldn't fix that, they wouldn't stay up. This may be because I baked the shell on the upper shelf of the oven, maybe that was too hot. I filled the pastry by putting the filling in a pastry bag, then smoothed it out. Other than these issues, I think it came out pretty good looking.

Need me some pluots. Usually this is made with pears but I like the versatility. I would make a candied ginger ice cream to go with it. Also can make creme fraiche by mixing heavy cream and organic buttermilk.
