Well- Hafidh in Soi Arab (the old location at the corner, not the huge one opposite Gulliver's) is actually amazing for Egyptian food specifically- they have a huge menu but the chefs are all Egyptian, so stick with that stuff. Beyond Soi Arab...it's a lot more hit-and-miss. Haven't been too impressed with much in the rest of Bangkok, but we do tend to stick to the Arab quarter. Phenomenal Afghan restaurant in Nonthaburi though.

Islam must have travelled by boat: very many of the Thai and presumably Malay fishermen are Moslems. They migrate crossing borders to settle on unoccupied parts of the coast. That much I learned from observation as a tourist in Thailand! Such a fantastic addition to Thailand's culinary history! He definitely knows his stuff!

I've been hyperfocussing on this channel and @roamingcook since November when I realised I'd be back in Phuket this week and getting my first proper trip to Bangkok. I booked my layover accomodation for Friday night based on your Khao Yam piece at the hostel at Rotinis but a 7 hour Air China delay screwed that. Thankfully someone on fb recommended a wonderful Phuket place for Khao Yam (Heng Heng Dim Sum). I think I got served about 45 minutes from my plane landing. You were right. It's thailand. It's incredible. It's a botanical spicy rice krispie treat salad ffs. It should not work.😂 Hope the pup is feeling better! Dog surgery follow up nursing is intense.

Thanks- and yes, we had the extra issues of 1) unsuccessful surgery, 2) unsuccessful stitching which had to be redone after a week, and 3) additional complications. Was a hard one. Probably still one more to go- waiting on some results.

I learned how to make (admittedly a rather poor version of) roti from my Aunt in Illinois, she told me how to use Pillsbury frozen biscuit mix to make roti. After that, I’d fed my American classmates and friends countless meals of Chicken Curry & Roti.

Wow Adam, Another ripper episode mate. The best thing about roti is the different mystery curries/gravies that you get offered from different sellers. It can change the whole dynamic of the bread with different curry profiles. Loving the mega HD shots, slo-mo sequences and awesome camera aperature settings being used on the last few vids. my fav thai breakfast is still โจ๊ก .. with dried fish.. fresh ginger and scallions.. and a poached egg.. many good places for it.. as a tourist the lightly blue colored one at the beginnging of sukhumvit soi 23 for instance

Some requests were taco mix, graham crackers, or smth uniquely nostalgic to that person. "Comfort food" is such an interesting topic that touches on so many others. Edit: hope your pupper is ok? On a covid-era holiday in the South my sons (10 and 12 at the time) chose to drive three hours back from Kao Lak to Ranong in order to eat Mutabak for breakfast rather than eat at the hotel buffet. Kids!

Hi OTR, I'm a local Thai living in Nonthaburi. Thanks for making this video ❤❤. I have an idea about a cheap local food and snack market mini-tour. If you start using the MRT Purple Line around 4:30 pm at IKEA Bang Yai, there is Bang Yai Market where there's a lot of local food, and the famous Chinese ice cream Mixue just opened in the market. Along the Purple Line, there is Owl Night Market in Nonthaburi 1 Station, which opens after 5 pm with a lot of cheap and good food options as well.

25:29 Ooh yeah, that’s what I’m talking about 😀 While I do like _roti canai/prata_ in Malaysia/Singapore with their traditional Indian curry etc, but I like how in Thailand the _roti_ toppings/fillings are more “freestyle” like in my own country Indonesia 😁 I guess it’s because in Malaysia and Singapore, _roti canai/prata_ is still very much tied to the _mamak_ (Indian Muslim) culture so there’s a strong tradition of toppings and pairings that suit the South Indian palate (like egg and onions), but in Thailand and Indonesia the flatbread has become so localized, there’s little to no rules to follow 😆 I stand by all the ridiculous _roti cane/maryam_ toppings that we have in Indonesia, including cheddar + _hagelslag_ (Dutch chocolate sprinkles), chicken floss + mayonnaise, as well as Milo + avocado 🤣 (I think I just gagged a little). 27:26 I wonder how the Muslim Thais and Malays feel if they ever find out that in Indonesia we even have _martabak_ with pork when in their countries they see _mattaba/murtabak_ as a “Muslim” food. But how can a dish have a religion, anyway? 🤔 You two are good pet owners. Wishing the pupper a speedy recovery! 🙏

Mataba/matabakh originating in Yemin is interesting. The Arabic word for kitchen is matbakh. It's a similar word in Hebrew too. There's a North African cooked salad/dip called matboucha, which is derived from the word kitchen. I wonder if this is how the Thai dish got its name too?

9:50 lol I was gonna mention that we call the flaky bread Protta in Southern India. This name is quite confusing to even Indians as we also have this North Indian dish called Parantha which is also a type of flatbread and has almost the same pronounciation.

15:19 - From what I remember of my schooldays, they taught in school that Parameswaran was from Palembang (in South Sumatra) rather than Singapore. Sounds like something I need to go look up. I'm surprised (though I shouldn't be) that there are places that sell roti with curry in Bangkok.. before this, pretty much all the shops and stalls that sold roti in Bangkok and Chiang Mai served it sweet.. even the egg roti had condensed milk drizzled on to it. Which surprised me - down here most roti flavors are savoury. I'd heard of roti being served with curry in Southern Thailand, but I figured that was because it was close to Malaysia. 27:11 - The best murtabak I have had, bar none, is on Arab Street in Singapore. When I go to Singapore I make it a point to buy a bunch to bring home and freeze. None of the murtabak I have tried around here compares. I suppose I should give the Bangkok version a try now I know where to find some. Come to think of it, there is a murtabak/biryani shop near Bobae Market, near the mosque. Most of the halal food sold around that area seems to be Chinese and Thai dishes, rather than Southern, though. One version of Murtabak I really didn't like was in Bandung.. in Indonesia they tend to deep fry it in a shallow wok instead of a flat griddle.. Once it was done the cook turned it on its side and all the cooking oil poured out.

The Palembang story definitely exists and actually says that it wasn't the Javanese who sacked Singapore- it was Siam. The first draft of this video had like 5 extra minutes on the various versions of the story (which is why it still says "the story is controversial"- I left that line in) but eventually I cut it down because it was objectively boring and off-topic. So the version I stuck with is the "consensus" that seems to be the most historically valid story. But yes, lots of different versions, including who actually converted to Islam in Malacca (Parameswara, or his son, or grandson)

Technically both is correct. Parameswara who founded the Kingdom of Singapura came from Sumatra, probably a prince in one of the many kingdoms in the Srivijaya empire

Why does Khao soi's curry sauce taste similar to Massaman curry even though khao soi is a northern dish and Massaman curry is from the south? (if I understand correctly - American food enthusiast here) I think they taste similar because both are less sweet than most thai dishes, use cumin, have a red-ish flavor. I think it's the cumin as well as maybe coriander seeds that imparts the "middle eastern flavor."

Another great video on food anthropology! In Singapore, roti prata is my go-to Saturday breakfast. It marks the start of my weekend when I can take my time to enjoy breakfast, coffee, cigarette and listen to podcast. Despite being a Chinese, I prefer bread, pastry for breakfast instead of rice or noodles. Anyway, it’s just my preference.
