I use 5 oz of ground beef in my patty maker. Makes a good size burger. I use the wax paper squares to separate the patties, freeze them and they go directly from frozen to the grill. If they stick to each other, a couple taps of a hammer on the back tip of a butter knife breaks them up quickly. Running them under cold water for a couple seconds lets me remove the wax paper easily.

Both! I have 2 kamado Joe's and I still use my Weber kettle pretty regularly. If you get a kamado just pick up a used kettle off craigslist dirt cheap.

@@CookingWithRy One of the advantages I have living on an island is the walk to and from the ferry every day. That's an easy 30 minutes on the step meter. Then there's the rage-dispersal walks I need to take on my breaks. Needless to say, I get in a LOT of steps. This frees up a lot of diet stuff...although, I do need to watch the sodium. Given that I live in the cold white north, and my birthday is in the spring, I have been dropping hints for the electric smoker you have recommend. Wish me luck.

I got a question,why cant you grind it straight to the medium size instead of grinding it coarse then down to medium

You can. Double grinding can sometimes work easier depending on the fat content since that can get very sticky as it heats up in the grinder.
