I find watching GR exhausting. He still goes 100 miles an hour. My dad's a chef and he was the same way - trained to work very quickly, they can't switch off.

@@iamasmurf1122 for example, my dad finished eating dinner at the family table before everybody because he's used to eating quickly to get back to work, even when it's his day off or on the weekend. there's a time and a place to be passionate and to turn it down a bit. another example, in an episode of GR's TV shows he learned how to meditate with a monk, but GR couldn't do it as he felt so unproductive sitting "doing nothing".

FYI, Ramsay's NY restaurant he's talking about here closed down in 2014. Back then, 2007, Gordon was not nearly as popular as he is now, and the locals only new him from his shouty persona on Hell's Kitchen. Ramsay, currently, has no restaurants in NY or California.

American customers are generally on a budget that makes eating out a special occasion, unfortunately that means that they can't afford to be hungry when they leave an expensive meal and will take leftovers with to offset costs the following day. Unfortunately they don't have a social system like the UK.

I've had horse meat in NL, sautay sauce, fries... great dish.. a bit chewy, but very much like sweeter beef.

If it was chewy it might have been a horse used to do labour or racing, because horse meat is generally more tender than beef. Even better than horse is female donkey meat , if you cook it right , pretty rare, and with a mixture of olive oil , garlic, oregano and parsley on top (it s called salmorigghio in sicily) it would be the best piece of meat you will probably ever eat

Some of the most memorable food I've had was in New Zealand on Stewart Island, which is the most southern part closest to Antarctica. I ate an unbelievably delicious seafood chowder and a Mutton Bird. What was interesting though is that the setting was like you'd expect of any decent restaurant, yet they were playing Smashing pumpkins. Can't remember the song but it was skipping and would repeat over and over again. It was such a funny memory but I'll never forget that wonderful food
