Thanks for the upload? What's the secret flours? I just use the packets of "Crispy Fry" and get a good result using a Breville deep fryer. It works extremely well with the fish. I buy the Vietnamese frozen fish fillet packets (1kg) which can be found at Metro, Robinson's and Save More for our Friday fish.

Hello Shane. My flours are for the dry seasoning Hard flour 50% Potato starch25% Corn starch25% White Pepper Salt Garlic powder Chicken salt. I don't dry the chicken . Good the chicken in the dry mix and leave for 20min . The flour will absorb the moisture in the chicken should be slighty moist. Return the chicken to the dry mixture this time tossing and costing well while squeezeing the chicken and creating gluten stands. Chicken should be a little shaggy. Dust off excess flour and Fry. Good luck.
