I was born and raised in Mexico City, grew up eating fried plantains and love them. I love the taste when they're fried but I was searching the web for healthier and easier options. Then I saw your video, so I say forget it, I'm frying my plantains again, YOLO! lol, I do like them mostly as dessert, with sour cream, sugar, cinnamon and sometimes chopped pecans on top, and yes, a little burnt is even better.

one of the nice things about being back in Florida is that all of the grocery stores have piles of plantains...they're so easy to prepare, and it's an easy way to score points with my wife

Felt like I learned a lot in this video. Like I've only had plantains three ways my whole life. They were either tostones or maduros, or blended up to make soup thicker. For some reason it never occured to me you could grill, bake, or cut up and boil it (but now I'm curious🤔).Thank you for the video!😂🙏

Very common breakfast in my country. If you can get Spanish cream like Mexican cream, it's absolutely delicious. If you can't, sour cream works great. Growing up my mom would add a little sugar but I agree with you it doesn't need it. Try them next time with a dollop of sour cream. Amazing!

I like to fry coin sized very ripe plantains in coconut oil along with par cooked cubed yams. Make brown rice on the side, add a scoop of salsa, sliced avocado and top with a spoon of chipolte BBQ sauce. Great Cuban bowl! Going to try your recipe. It looks delicious.

Black like that is great. Will need a little salt. The blacker, riper it is, makes it softer, sweeter, and yummier. Gooey sweetness. The green ones are fried, taken out and flattened, then refried again, salted and eaten crunchy. “You can eat them raw” ? I never heard of that.
@ChefBuckRecipes
@ChefBuckRecipes 6 жыл бұрын
I never eat them raw, but you can...and I love the twice-fried tostones; I've cut back a lot on salt in the past year, I miss it, but on the plus side, it doesn't take as much salt to be "salty" for me anymore...now my wife is always like "where's the salt?"

You can eat the green ones too. Make tostones. Carefully Slice the peel w a knife. Slice banana into roundish shapes , fry, watch carefully cuz they burn easy, half way through take them out, squash the round half way w a tostoneria or something flat & heavy, put it back in the oil to fry until golden brown & cooked. After you take them out sprinkle lightly w sea salt or adobo, any seasoning u like I guess.
@ChefBuckRecipes

Take your green plantains, boil them till they're (fork) tender..remove the skins, mash them then set aside. In a pan, heat 3tbs of olive oil and add finely chopped garlic.. toast the garlic in the oil and combine with the plantains like you would butter in mashed potatoes (salt to taste). We call it FUFU.. and we serve with fried eggs, pork belly or chops... whaaaaaaaat!?! What part of Florida are you guys in? It would be cool to meet you both! Chef Buck.. you ever try Ropa Vieja (Old Clothes)? Awesome with FuFu!! (Brisket recipe)

I live in Germany and they sell these in a local African/Asian store They don’t have any labels bc it’s setup like a mini market ANYWAYS how do I know if they’re the plantains to cook or to bake and fry like you do??? Or could I just buy a green one(that is supposed to be cooked) and then wait until they’re black and ripe so I can fry them for a sweetish dish??

@ErsahMajor
@ErsahMajor 6 жыл бұрын
No need for the sugar.. with some plantains all you need is a hint of salt to get the salt/sweet you want or need without going overboard. Semi-ripe plantains are great for boiling too, but better fried (in my opinion). You can also take the green plantains, peel them, and cut them into super thin slices. Leave them in salted water for 30 mins. (drain) then carefully (deep) fry them till crisp.. plantain chips! Try those with eggs...yum!

I used to be the same way, but CG turned me around over the years...Sweet Fried Plantains is one of her favorite dishes, and while I'm more of a savory guy in general, I've come to really enjoy the sweet plantains with breakfast...I tend to buy more of the unripe plantains and use them like a potato, but if bring green plantains home, I better have some ripe ones, too, or CG will give me "the look"
