Rivet Gardener We try not to do these overhead videos too often, but regular host presentation is pretty disruptive in our house. So sometimes this is a good compromise. And a short video is sometimes all that's needed. My family keeps asking for these again. And I would LOVE some garden fresh tomatoes. I'm going to try basil again this year using your suggestions with soil temp and moisture. A caprese salad sounds so good now!! 💞😊

The tenderizer is an OXO Grips tenderizer. We get them from Bed, Bath and Beyond here, but I think any store that sells homewares and OXO products should carry them, or at least be able to get them if you ask. Cuisinart also makes one that is longer and thinner. We marinate chicken and pork in buttermilk, especially chicken pieces for frying. Delicious! The sandwich is amazing!

This is not the only tenderloin sandwich recipe I've seen where they use loin instead of tenderloin. Why is this? I know loin is a lot cheaper and probably easier to make it big enough to dwarf the bun, but is it just as good as tenderloin?

Yes, pork loin is extremely flavorful. And you are correct: the price is significantly cheaper. Also, I have to make 6, so the whole loin just makes more sense. With all the pounding and tenderizing, the texture is very soft too. Thanks for watching and commenting. 🙂

Just fyi...what you were preparing is NOT pork tenderloin. That was part of a pork loin roast. The two are very different. The sandwich looks delicious either way.

I’ve never tried it with the tenderloin as that needs to be pinwheeled rather than pounded flat. I know the two are different and I also know the confusion the name causes. C’est la vie. They call these "tenderloin" sandwiches, but to me that doesn't seem quite right: 1) The tenderloin is a prized cut of meat from the pig, almost equivalent to the filet in a cow. Why would you waste that pounding it out, frying, and making a low-brow sandwich out of it? That tenderloin is waaaaay better for a succulent roast or tender pork medallions -- again similar to the filet mignon from a cow (though admittedly the version from the cow is way, way better) 2) Most of the time when you dig into it, the meat that's actually being used is part of the loin. Which, while not as costly/rare as the tenderloin (there's about 3 or 4 times more "loin" meat than "tenderloin" meat on a pig) it still seems like using a cut that makes *excellent* pan seared chops and instead they be pounded out and turned into a $3 sandwich seems...wasteful... 3) My personal recollection from "back in the day on the farm" is that these sandwiches are *best* when made from parts of the leg/ham that, instead of curing, get sliced thin, de-boned and then run through a mechanical tenderizer at the time of the slaughter/butcher. Then when ready to prepare, pound a bit more on them (if you wish, if the job was done right at the slaughter you won't need to) and then bread and fry those suckers up! The ham (I'm referring to the physical section of the pig, NOT that it's a piece of cured meat) has a much better muscle profile for this type of preparation...it's almost the "dark meat" of the pig. And, it's waaay better for making a deep fried pork sandwich than either the tenderloin or loin. Plus, the ham section of the pig produces a lot more saleable product than either the loin or tenderloin, so it's an economical choice for use in this application.

Thank you for that thoughtful comment. Here, tenderloin costs about $2.49/pound and the whole loin frequently sells for $1.49/pound. Typically the tenderloin is used in the restaurant version of this sandwich. Since I don't have access to a slaughterhouse/butcher, I'm left with choices that I (and the viewers) can manage without too much difficulty. We buy a lot of loin, so loin it is for us for this sandwich. Thanks for watching and commenting. 🙂

We film like this on occasion since it's much less disruptive in the house. With our regular host presentation-style filming, we have to yell at everyone to be quiet, all the electronics have to be muted and filming generally takes 5-6 times longer because of multiple takes of each clip. But don't worry, we're not planning to completely change our filming style. :-)

Just because someone tried to scam you with a fancy title, historically, by marketing this as a tenderloin sandwich, doesn't mean you should continue. I'm here looking for tenderloin recipes and this shit came up and I realise, that's not a tenderloin! Thanks for wasting others and my time. Oh and if you have time, check out my fillet mignon sandwich recipe. It's got no fillet in it though, it's made with chuck. Idiots.

However, the video is titled as pork tenderloin, and there is no tenderloin in sight, but that isnt even my point! It's the hilarity that loin is also called tenderloin?!? What??? The point I'm making is... stop calling stuff by the wrong thing. If it's loin, then it's a pork loin sandwich. If it's tenderloin then call it that. If it's chicken then call it that! I'd be pissed off if I ordered a tenderloin sandwich and there was anything but tenderloin in it! But as it doesn't bother you, then please try my chicken sandwich... nooo it doesn't smell like shit, nooo there's no dog shit in it, its 'called' a chicken sandwich. 🤣🤣🤣

Come on man. Please tell me you didn’t put all this effort into making this video only to confuse pork LOIN with pork TENDERLOIN. Your title says tenderloin but NO ONE makes these sandwiches with tenderloin. But in your recipe printed in the video it clearly reads “pork LOIN”

Come on, girl, please tell me that you don't know that these sandwiches can be made with either cut. They are called the same regardless. In Illinois they're called elephant ear sandwiches. Do you think those are made with elephant ears?

@@alexblaze8878 again, it's called the same regardless of which cut is used. Most, if not all restaurants serving this sandwich use the tenderloin, butterflied and pounded to about the side of a large platter. Most people making this at home use the loin for economical reasons. But you could use the tenderloin if you wish.

Laurice's Kitchen it’s called the same out of laziness. I don’t call a beef loin steak (say a NY strip cut) “tenderloin” (filet mignon). That’d be just silly. Similarly just because most people are ignorant about the difference between a pork loin and tenderloin doesn’t mean you have to propagate that ignorance.

I wouldn't refer to a loin porkchop as a tenderloin porkchop anymore than I would an eye of the round as a filet. Do you gripe to Popeye's that their pull apart chicken tenders are a breast and not a tender? Perhaps you should start calling "hamburgers," "cow patties."
