Oh my freaking goodness. I just made your gravy (haven’t even added the chicken drippings yet) and it’s incredible. I didn’t have any homemade stock and noticed my boxed broth was no good so I used water and Better Than Bouillon turkey paste instead. It still was so delicious. In case anyone is wanting to know - based off of your video and visuals of the ingredients in those deli cups - I guessed on measurements. Right or wrong, this is what I worked with: - 1 stick Butter - ½ cup (60 g) Flour - 1 large scallion, finely diced - 2 tsp(?) low sodium Soy Sauce (I used a 22% sodium Dark Soy Sauce) - Small spoonful White Miso - Add enough stock/broth to desired thickness, 3-6 cups?. I used the water and bouillon paste instead in this case. - Sprinkle in MSG to taste (but I forgot 😬) - Oh and I added a quick splash of Sherry Vinegar at the end to give it just a touch of acidity for balance. I highly recommend. This was the best gravy I’ve ever had and my absolute go to gravy from now on.
