Tried it today and omg I loved ittt! I added the red paste for a bit of spice and I didn’t add mirin and it was out of this world wow wow ! Thank you for this recipe the fried garlic is amazing

Thanks :) . I ended up leaving it out. I loved it but I think next time I would not put fried garlic in and instead put some sesame oil. In my case I used red miso which is what I had on hand.

Aww man! I want to warm up to a warm bowl of japanese ramen too, but I cannot use sake for religious reasons. Replacement for it? Will removing the sake cause a huge difference in taste, or is it used to remove the smell?

Not at all! There has been times when I didn't have sake on hand, I just didn't use it. No major changes.

Good video, my only critique would be to wash your hands after handling the raw chicken! It’ll help prevent cross-contamination

Anand I can see how it can look like I didn’t wash my hands, but right after I grabbed the chicken and started chopping the other ingredients, notice each ingredient that I touched went into the pot to get cooked as well. And I edited the part that I washed my hands before pouring the water in. I am a maniac about raw meats, I promise. :)

You're not supposed to eat the stems of shiitake mushrooms and way too much sesame oil. Also, ramen doesn't use egg noodles... This is NOT ramen...

Sushi Juice The reason why some people do not eat the stem is bc they find it tough, I however am not bothered by it. “Too much sesame oil” is subjective. Lastly, I prefer egg noodles verses traditional wheat noodles. No where in the title does it say “authentic” ramen. Lucky for you, there are countless videos for “authentic” ramen available on KZbin. Good day.
