Honestly I'm glad I stumbled across this! This seems to make ramen much more easier to make than other channels I've seen that have "authentic" recopies and it intimidates me. But seeing these easy ingredients to help an often overwhelmed woman makes me happy I can make my favorite dishes at home!

Love this video! Been wanting to make homemade ramen without so many of the extra days it takes for some of the broths haha 😅. Also I noticed at 12 mins or so you do what i believe is called a "cartouche". Seen it done once or twice at my restaurant but always with parchment paper. Basically just helps with keeping in moisture while boiling something. Thanks again!

Wow, what a great set of recipes. The 'sake' you use....what kind is it, do you refrigerate it? Can you use 'cooking sake' instead of drinking sake?
@JapaneseCookingChannel
@JapaneseCookingChannel Жыл бұрын
Thank you so much for watching it! You can use cooking sake too! Mine is drinking sake. The brand name is "Sho Chiku Bai 'Ten' Sake". www.wine-searcher.com/find/sho+chiku+bai+ten+sake+japan/1/japan I just buy this because this is the cheapest one so far. 😁 As for storage, since cooking sake contains seasonings other than sake, it is better to keep it refrigerated. While, the sake I use is always stored at room temperature. (Others may have a different opinion.)

Try adding stir-fried anchovies in red pepper paste to ramen soup. It tastes very similar to ramen soup. I think it would be similar if you also added green onions and red pepper powder. Ramen Sari is a method of pulling noodles, steaming them, and then frying them in oil.

I really love your video. I went to try to get the chicken stock powder and it is no longer listed on amazon. Hopefully I can find one similar.

Thank you! Do you mean Somi Shantan (Soaji shantung) is not available in your country? This one is similar product to Somi Shantan (Soaji shantung), so please check it out! amzn.to/46wXUi3

I love tonkatsu ramen, but I don't want to spend hours boiling the soup! I especially love adding a half boiled egg. I will definitely try this!

This may be a silly question, but I’ll ask it anyway: I don’t eat pork. Is there any way I can make a decent ramen without using pork?
@JapaneseCookingChannel
@JapaneseCookingChannel Жыл бұрын
Thanks for asking! You can use chicken instead of pork! For the ground pork, you can also use ground beef :)

Thank you so much for watching my video! I used whole milk. But you can use non fat milk or some other kind if you want. Using soy milk would also work, I think.

great video! what type of miso would be good for everyday use … esp for tonkotsu ramen?
@JapaneseCookingChannel
@JapaneseCookingChannel Жыл бұрын
Thank you so much! I think miso made from rice koji is most common and popular miso in Japan as it matches various dishes. I use it for everyday use (miso soup), and also used in tonkotsu ramen. For example, like this one here↓ amzn.to/3VcoeXX You can use miso that is easily available!

thank you sooo much … would you recommend a miso with dashi for everyday use? love love your videos
@JapaneseCookingChannel
@JapaneseCookingChannel Жыл бұрын
@orange the visiting cat Thanks for your comment! Yes, I recommend it :) I like to use miso with dashi for everyday use because it's easier and saving time. I often use it in dishes other than miso soup, as the dashi broth in it gives it a rich flavor. It is your choice, so any miso can be used with or without dashi.
