This is really smart. I was wondering how you used all that squash. I like to make butternut squash or pumpkin gnocchi. Just use the squash in place of the potatoes, make the gnocchi then freeze it individually on a cookie tin, then put them in a zip lock bag for freezer storage. You can make squash ravioli as well. Great video. I really love this channel❤

2 cups of puree squash or pumpkin fits perfectly into a 1-pint ziploc freezer bag. Squeeze out the air, press it flat, and stack them in the freezer. Lots of puree squash/pumpkin, not a lot of space needed. Good way to preserve squash that have dings, won't keep.

Good video. I’ve fallen in love with B-squash too. I mostly make cupcakes, Cornish pasties, and curry featuring squash. Because it’s so easy to peel, I shred raw squash in the food processor (looks like cheese!) and sneak it into all things Italian and rustic cabbage slaws. Unripe squash (white inside) is a great sub for mashed potatoes. Lots of butter!

I was inspired by your use of Butternut squash to give it a try! My first try was to roast it the same way I roast Yellow Sweet potatoes or regular potatoes. Cube up and then toss with melted butter, brown sugar, sage (I use powdered), garlic powder, salt, parsley. I like the French fries idea. And I am going to try some soups. Over the last couple of years of watching your wonderful channel, I have gained a new appreciation for winter squashes. I always enjoyed the summer ones, but not so much these. (Although I always loved pumpkin pie!) I bought them and baked them and fed them to my daughter as a baby and toddler as one of her snacks to be sure she would like them (same with melons in summer) but I never really ate any. I did learn to like butternut soup, but it never occurred to me to broaden my horizons - until I found you. Now I have found I really enjoy things made from butternut squash! Thank you for that. It's always so fun to watch you all, busy in the kitchen and gathered around the table for dinner. Always filled with the excitement of being alive and happy to be together as a family. It's in every single, shining face around the table. And most visible in your youngest at 11:00! 🥰🥰

Excited to try making your pancakes! I use puréed butternut squash for a Thai curry base. I use coconut milk and yellow curry powder. I usually make it with chicken and serve it over rice or root veggies or even flatbread (like naan.)

Thank you for sharing! I love butternut squash, especially in soups and in oatmeal 😋 The Norwegian name for it is actually not “squash”, but “pumpkin”, it’s directly translated to “bottle pumpkin”. I was so used to the English name from American recipes that I didn’t notice and used the Norwegian name for it for years. It’s not that common here in Norway, and most stores only have it right in the harvest season. At international stores, like Asian markets, they do have it all year long, but it has become very expensive. I can totally understand why you grow and eat so much of it, and I will try to get one in February when my life has calm down. The part took me back me a little because winter squash is actually a great calorie crop. There is a huge range in dry matter content so 1 kg of winter squash can range from about 130 calories to over 1000 calories making the densest ones higher in calories, sugar and starch than potatoes and orange sweet potatoes. The dry matter content of winter squash ranges from about 4-30% in the flesh so there is a huge range but some are very dry and sweet. Usda averages don't account for the wide range. On the low end thats mostly giant pumpkins you probably wouldn't want to eat. Potatoes and orange sweet potatoes are around 20% dry matter (white and purple are much higher in calories but they were not mentioned as comparisons in the video) also many winter squash are full of oily seeds which are very high in calories fat in protein.

In studies Waltham butternut squash averages about 12% dry matter which equates to about 400 available Calories per kg, so Not a high calorie squash but tetsukaboku, sweet mama, winter sweet, and honeybear-acorn (that specific variety some varieties of acorn squash are low in calories while others are high in calories) sqash are closer to 1000 availible Calories per kg at nearly 30% dry matter. Probably taste excellent. I just don't want anyone watching this to think that all winter squash are the same in being lower in calories than potatoes and orange sweet potatoes.

Oh, and oilseed pumpkins are a great calorie crop at around 6,000 Calories per kg of dried seed, mostly fat with a lot of protein as well

I use the word "pumpkin" generically because I actually mean whatever winter squash works, but I make a pumpkin, black bean, and smoked ham soup with sherry that is so good, kind of New Orleans /Caribbean flavors; then a pumpkin cheesecake with ginger snap crust; and pumpkin rosemary lasagna bianca. It's such a versatile crop and keeps so well!!

You know fresh seeds are great for parasites just blend them whole with little water and this will turn into milk that has this anti parasite thing that kills them. Milk is good too, like kind oat milk. Try and great stuff you showing, I’m also amazed with butter squash. Greetings from 🇬🇧

About the potatoes storage, I know you dont have root cellar which would make them last a little longer but do you also grow some very early variety? I checked what you grow and if I understand it correctly, they are all mid - late season? (I dont know these varieties, we have different ones in Europe). The combination of very early and very late potatoes should be enough to make them last till the next harvest (the same applies to apples).

I had the same issue, and I observing the leaves every day, I was finding groups of eggs which looked like mustard seeds at the base of the leaf petiole...not the underside, but topside. I simply snipped those leaves off and burned them. My problem went away and had a huge crop. No need to spray anything. Removal of the leaves did not hinder health of plant nor crop abundance.

We live on the coast of VA and can’t have a basement or cold room because of how close we are to the water table. Storing food has been challenging because of that. Do you think you could freeze an entire butternut squash and then pull it out to thaw and cook later? In the craziness of summer, I can’t always process everything when it’s all coming in from the garden, so being able to throw into the freezer sounds so nice!

I’m in Deep South At least in winter it’s cold up there u can stuff in an unheated room for awhile We have clay n digging a cellar is just cost prohibitive There’s no way to store anything. Potatoes go bad, onions, just some sitting in kitchen more than a few wks. Laying up tubers, roots, fruits-forget it. It’s very frustrating to me. I’m from Arctic York State. The best I’ve found is building a mound and makin a root cellar in there but I’m sure it’ll only be good maybe Nov thru Feb. Besides the huge expense involved it’ll prob never happen. Wish we weren’t living on a pancake here. Noooo hills. The upside is the ridiculous growing season Planting starts Feb 1. In Nov I can harvest lettice! Into Dec my neighbor harvests things. With a greenhouse u can grow all yr.

Unripe B-squash has a green stem and small stripes of green near the stem. It’s white inside and peeled cubes boil up like potato, only faster. Mash it up w/a fork, add salt & butter, it tastes good!! Very “wet”, this mashed potato substitute does not need any milk or cream. Just some roast chicken & green beans!

I live in Wisconsin Zone 5, and you can probably plant squash seeds outside on Memorial Day. Beware - the plants grow large leaves and long vines! One vine should give you 4-5 squash. They appreciate being watered a lot. Pray for rain!

You have that huge metal building, why is your cow outside at night in such cold weather? Why do you milk outside when the wind chill is -20°? I'm not trying to be ugly, I would really like to know what your thinking is. It takes a lot of energy to keep yourself warm in extreme cold. That's why Inuits ate/eat so much fat...instant warmth. I am 80 years old and no longer milk cows or goats but when I did we always provided them with good shelter if and when they wanted it. And when the weather was inclement they usually did. Especially goats. And we live in north Arkansas which is no where near as cold as you describe. I enjoy your cooking videos. We still garden and have a full larder. We love butternut squash in particlar and I am always looking for new ways to use. I have never thought of pan cakes! Guess what's for breakfast tomorrow?😊

I love your approach to cooking and life in general. I share your love of squash, and my house is covered in squash, waiting their turn to become dinner. Lol. One thing you said was that butternut squash are a lower carb than other squash, like Hubbard, and sweet potatoes, and that lower sugar makes them a healthier choice. I just want to point out a little known fact that may be of value. What causes diabetis via insulin resistence is the fat, not the sugar(carbs), in a meal. The fat prevents the cells from taking up the insulin circulating in the blood. It literally gums 🎉 inhibits, circulating insulin in the blood from regulating blood sugar inside the cell, so high sugar spikes in the blood. I respectfully recommend you consider this. By adding butter and fat from meats and dairy, and maple syrup to your squash meals, you are inadvertently putting your health at risk. Salt, sugar and fat do not all occur together in a raw food item in nature, so human are brains are wired to constantly look for the dopamine hit they provide when combined. If you don't eat high fat with your carbs, even if you add table sugar, or maple syrup, you will not spike your blood sugar, unless your pancreas is not secreting any insulin. Sugar does not cause diabetes. Fat does. You can hear lectures on this on Dr. John Rogers KZbin Channel and the late Dr. John McDougall's KZbin Channel. I highly recommend both sources in terms of nutritional facts. My family is plagued with both types of diabetes. I am the only one who has not turned on that gene because I don't eat any fat except the fat that occurs in the vegetables like oatmeal, which has a lot of fat, that I eat. Roast them with the potatoes and sweet potatoes. We dont use for pies, try it as curried pumpkin soup

First, Do you have to cure your squash prior to storage in your basement? Second, how do you prevent mice (that is in every basement once the snow falls, cold weather is here, until taken cared of) from eating your squash or any of your harvest. (I’m learning as I go, never too old to start, but I did start older, as a hobby now, but eventually, hopefully a lifestyle)

I think your family is probably getting enough vitamin A! I hope you’re not getting an excess. I think it’s commendable that you are finding ways to use up so much squash. I love butternut squash, too, but I have a hard time wanting to grow squash at all because of dealing with squash bugs. Do you have them where you live? I read that Canada Crookneck squash doesn’t attract squash bugs and I love it maybe more than butternut, so I will try that this year. Thanks for all the ideas! This is the first time I’ve watched one of your videos.

Since there’s no vitA in plants, only animals, they’re safe. Beta carotene is not vitA. Humans are quite poor converters of it also.
