We all need to eat more veggies & good protein. As we needed to use up some ingredients from the cupboards and the tomatoes were on there way out so a veggie bake seemed an ideal solution.

That looks absolutely delicious and I’ll be making this for lunch today as I surprisingly have all of those ingredients on hand - including the soft tomato’s that need to be used up. Your garden looks great. It’s so satisfying to be able to feed yourself with food that you have grown yourself.

I cleaned up 6 bags of clearance vegetables and used scraps and made 6 quarts of vegetable stock. Then I trimmed and sliced 37 pounds of carrots for preserving and I bagged up the ends, and the limp ones and froze them. I found a great recipe for a creamy carrot soup, using vegetable stock. With onions, garlic,salt, pepper,a sprinkle of cayenne and ginger it simmered. Then served with coconut milk and a splash of lime juice. What would have been scraps to most gave us 6 quarts of delicious vitamin rich soup. I have a few vegetables in my kitchen waiting for another recipe, and Jane this is exactly what I needed. Thank you. I don't have feta, but I do have some shredded colby jack cheese that will work great.😊

For some reason I’ve never thought of adding feta to eggs. Love this idea! I could make it early in the day before the afternoon heat hits and then reheat in the microwave. Thanks, Jane and Mike!

I would have do divide this into two halves and use another cheese in one portion. I'm alone in my love for feta 😊. It would be well worth the extra little bit of effort though; this looks great!

I am so envious of the beautiful lettuce you picked from your garden! It is winter here in Australia so I have quite a while to wait before I can hope to grow any in my little veggie patch. I love the doggy photos at the end of each video. I had a laugh at the new one with the pink paper 😅

I've been doing tons of basil-rich tomato and mozzarella or corn salads, a pot or two of beans and veggie pan roasts for the last few weeks with things like mushrooms, broccoli, peppers, onions, spinach, garlic, beets, the last of the spring asparagus and fresh herbs, pretty much anything on sale or that looks good at the Farmer's Market or Trader Joe's and that, with some pasta, cheese and the occasional egg for me or steak for my husband or a shared seafood, yogurt or cottage cheese and fruit is pretty much it.

Oh, I also wanted to suggest Orechette with sausage and broccoli rabe for you and John since you guys get that nice sausage on sale. It's really cheap, easy and delicious! Love from NYC!
