Fou is actually a rabbit Rabbit of Caerbannog specifically. It used to roaming around cave and causing so much havoc, the entire Knight of Round Table need to move. Luckily, Merlin can take him down with Holy Hand Grenade of Antioch. Resulting Fou become harmless, but extremely pissed off everytime he sees Merlin's face

I think Merlin calling him Cath Palug is just passing it as a joke because of the Arthurian link to the story of Cath Palug (a dangerous and gigantic cat of irish myth that, depending on which story you read, is slain by either sir Kay or Arthur), and is just his way of calling Fou "a dangerous beast", because that's what he revealed himself to be to Mash: Beast IV. The comparison is kind of funny too, because that cat was claimed to have murdered nine of the strongest knights (180 people total), and in Tsukihime lore it would take at least seven guardians of the grail to even subdue him.
