Hi Derek! Fajitas are the sizzling strips of the bell peppers and onions (usually with beef or chicken. )I love to do mushrooms. Burrito is the actual wrap that the fajitas go into ! ❤

Hi Derek! Both pumpkins look awesome. You both did such a a great job! Fajitas are named after the type of beef traditionally used. Very thin sliced and seasoned beef. A plant based version can be made with anything, soy curls, mushrooms, tofu, etc. Burrito comes from Northern Mexican and is just refried beans, meat, or what ever in a flour tortilla wrap. You can make a burrito out of fajitas. I hope that makes sense. 😊

I super highly recommend toasting your pumpkin seeds while the oatmeal cooks, it makes them 1) way easier to chew on when its crisped up, and 2) just way better tasting imo

But I have to say, given all of your great recipes & delish content, it hurts my heart to see you use store bought salsa/pico de gallo. :( You can make some AmaZing salsa concoctions of your own, I believe in YOU!! It is my 1 request to see you bang out a killer salsa recipe all your own, PLEASE consider this, you will rock it - no doubt! Here's what I do when I want anything with a tomato sauce base on it. This is also quick. Just add a jar of sauce to pot then blend in a Nutri-bullet/Vitamix some water, garlic, nutritional yeast, spices/herbs if you want them plus nuts of choice. I use 1/4 c. cashews most of the time and then add that to the pot of tomato sauce and you're in business! Cuts way down on the acidity of the jarred sauces plus adds a creaminess that's delicious. Ratios are up to you plus you can also add other meat replacements like soy curls/etc.

Wow! Those pumpkin are fabulous!! I saw a new way of looking at pumpkin carving that I thought was ingenious. The guy cut the bottom out instead of the top. You sit the candle on the "lid" and just put the pumpkin over top. Seemed easier.

Hey from Texas, Derek, lemme help you with the Fajitas question. Fajitas = Tex Mex stir fry. It isn’t “a fajita” my dude. It’s not like a burrito or a taco. Fajitas refers to the chopped up ingrendients when they’re sizzled at high heat on a griddle, skillet, or comal. Usually fajitas base is onion, peppers/chiles, maybe garlic, and then traditionally chicken or beef. For vegans soy curls, why not. But yeah fajitas is super hot and fast cooked veggies and protein. Then you can do whatever - eat with tortillas, wrap like a burrito, put on rice, it’s just a preparation method.

PS typically the fajita meat is grilled first over fire, then chopped up and thrown into the comal with the sizzling veggies and tossed and served still sizzling
