I am a runner so I tend to eat after my early bird workout. I almost always eat baked oatmeal because I prefer the texture. I take 2 cups of rolled organic oats and mix it with two very ripe mashed bananas and then add 1/8 cup each chia and flax seeds, 1 tsp. vanilla extract, and 1 tsp. cinnamon and/or pumpkin pie spice. Mix all together and smash 2/3 of it into an 8x8 square baking pan lined with parchment paper, top with 2 cups of fruit (I usually use 1 cup frozen thawed blueberries and 1 cup frozen thawed cherries). Crumble the remaining oat mixture evenly on top and bake at 350 for about 30 minutes until lightly browned on top. Then I cut it into 6 squares and top a square with a bit of chopped walnuts and/or raisins. It's like a healthy fruit cobbler.
