Kelsey, I think your pantry IS Pinterest worthy! Your husband did an excellent job building the shelving and you’ve filled them with a beautiful assortment of food for your family. We only started gardening in 2020 but after a long break from canning I started that back up in 2021 too. I know the time, energy and commitment it takes to put up food. You’ve done an incredible job! I love watching Jessica at Three Rivers Homestead. I’m amazed at what she is able to put together for meal. I don’t enjoy cooking 😏 so I’ve been on the hunt for ‘meal ready’ ideas to put on the shelves too. Red Rose Homestead has a couple of videos where she does meal in a jar and meal in a bag. I found it inspiring. I love that others are sharing in the comments some good ideas! I was thinking the jams would be good filling for crepes or maybe a filling in a cupcake or cake. I also wondered when you mentioned not liking the texture of the canned apples if they could be puréed and used in a recipe as sweetener substitute?? I was also thinking you could make homemade pop tarts and use the jam as a filling or heat it up with a little water to make a syrup for pancakes.

The canned apples, puréed and used to sweeten muffins and even as an egg replacement in a cakes works beautifully. I am allergic to eggs and when growing up this is who my mother made pancakes. But also, pureeing it down to an applesauce and swirling through an apple cake or even a sweet bread with some cinnamon and raisins would work well. Or making little sweets to serve at a holiday get together for party snacks and drinks. Use a little phyllo pastry, add a little of the apple purée, some extra cinnamon and fold and roll into little cigar shapes, bake or deep fry. You could do the same with the apple purée but instead of cinnamon, add some grated extra sharp cheddar cheese for the sweet and salty combo. And the puréed apples would make a great sauce for ice cream, or even over pancakes and waffles instead of maple syrup. It would be a great addition to some homemade cocktails too. I love Red Rose Homestead’s channel too. Her meals in a jar for keeping on the shelf are fantastic, but I love how she preserves food in other ways too. Her no waste ethos is fantastic also.I had never thought to dehydrate and powder tomato skins until I saw her do it. I have not seen Three Rivers Homestead’s channel I don’t believe, so will be headed over there next lol. But Kelsey’s channel has become a firm favorite of mine.

I use jams and jellies to sweeten up smoothies sometimes. Also love using my green tomato salsa Verde as an enchilada sauce for regular enchiladas, or an enchilada casserole, also as a base for chicken chili.

Using up things that don't work out or aren't liked is a challenge. The soft apples I drained the liquid off, purred and used it as sweetener in some baked goods, or mixed the apples in Greek yogurt. I was getting tired of cucumbers too so I peeled some, sauted in garlic and butter ,added salt, pepper and a bit of Parmesan and served them as a hot vegetable! The family didn't even know what they were. A jelly idea : One of my children was gluten free and she always liked peanut butter and jelly but GF bread was too dry so I mixed up muffin batter and filled the cups half full, added a spoonful of peanut butter, one of jelly and then more batter and baked. They stayed soft, had the filling inside and are super kid friendly. Suddenly instead of being a freak her friends asked her to bring them one. My recipe is 2 cups flour, 1/2 cup sugar, 2 tsp baking powder, 1 tsp salt, 1 cup milk, 1 egg, 3 Tblsp oil or melted butter. They bake at 350 about 15-20 minutes. I recently found your channel and am enjoying it. Gloria.

The things I am freeze drying over the winter are yogurt drops, meats, citrus, and full meals. If I have leftovers I freeze them in shallow containers. When they are fully frozen I pop them out and save them all together in a bag. Then, when I have enough, I freeze dry them.

Loved your pantry tour.. yours pantry is truly amazing and beautiful!! I know how much work this is! Recently, we switched from using syrup on pancakes to using jams and we have loved it. Same here with a lot of our things. Put some jams and jellies on roasts in the crockpot! I got a ton of fruit items and we don't eat that stuff either. I just filmed my pantry tour today. I have never done a pantry tour because I was so scared of raidings that I have never shared anything in storage. Since we just moved I want to get a record of what we start the new homestead with and see how it changes. If it becomes a hazard, of course I'll quit, but I'll do it once, lol. I just started doing more "meal in a jar" canning the past year, and it did come in handy to pull a jar of soup off the shelf and heat up when we were sick in November. The strawberry lemonade concentrate is one of our favorites also! I made blueberry lemonade too. Your pantry is beautiful!

You've got a wonderful well stocked pantry! For your jellies I would suggest using them in baking and they are amazing in oatmeal. Also, I canned plain apples one year and didn't care for them either. I made apple sauce out of them to use them up.

Many many years ago when I took home economics in high school, our teacher taught us to make jelly muffins. It’s just a basic muffin recipe, not too sweet, where you fill half your muffin tin with the batter, spoon in a dab of jelly and then cover it with batter and bake it. It’s just a nice little surprise in the middle of the muffin when you crack it open.

Suggestions: Salsa Verde is actually quite good as an enchilada sauce for chicken enchiladas. Chop your older pickles up for relish in potato salad. For your jams; you could make a cobbler and swirl the batter with the jam mixture, or just mix the jam in with fresh fruit when heating for a cobbler and additional sugar would not be necessary.

I use the butters in breads. Instead of using cooking oil, I substitute with apple sauce, apple butter, apricot butter/sauce or pear sauce. You can also use it to make oatmeal bars!

The maple strawberry smooch is perfect as a syrup on waffles, pancakes, and French toast!! We eat a lot of breakfast foods, and do breakfast for dinner at least a couple times a month and it’s been perfect when we do a sweet breakfast food.

I'm a new subscriber and I have a couple of suggestions for the jams and jellies. You can use them in baked goods such as filling for oatmeal bars. Pat 2/3 of the crust recipe into the pan, top with fruit (jam/jelly) then top with crumbled remaining dough. You can add a couple of tablespoons of cornstarch to 2 cups of jam/jelly and heat on the stove to thicken the jam/jelly to use as a firmer set fruit filling. Freeze dry the jams and jellies then turn them into a powder to add to baked goods, oatmeal or tea to sweeten them. Dehydrate the jams and jellies to make fruit roll ups. Use some as a glaze on ham or a pork roast. Apples and pork are a good flavor match. You could use some of those apple slices to mix with sliced cabbage and onions, place them in a roaster, top it with a pork roast and bake it. The apples will blend well with the cabbage and onions to sweeten them up and make a nice side dish to go with the pork roast. You can use the plain apple slices for a quick cooking apple crisp or a baked apple pancake (Dutch Baby).

The jams and jellies would be great as a yogurt topping. Warmed up and used as a pancake, French toast syrup. Mix them with a bit of whipped topping and use on top of a cake. Your pantry is amazing. I made the mock pineapple this past year too and haven’t tried it yet either.

Those jams and jellies go well in yogurt, and as the sweetener in smoothies! Yum. Also, I've been freeze drying lactose free milk and goat cheese, so I have those ready for this challenge. I froze and freeze dried fruit as well as canning it, so I wouldn't need to buy fruit. My exception is I'll be throwing a baby shower in February, and might need to get goodies for that! This will be my first year trying this challenge! I'm excited about it!

That’s some great planning! I do have some freeze dried milk but I try to save all of that for emergencies. My kids are picky when it comes to fruit. They don’t love freeze dried fruit as is or reconstituted 😬 sooo yeah 😂 I’ll be needing to make some trips to the store. I’ll be canning much more fruit in the future! To help use up some of my jam, I make homemade poptarts for my granddaughters. I buy puff pastry (my wrist is in a cast so I can’t make my own), cut it, add jam, seal the edges and bake. I just sprinkle some turbinado sugar on the top.

Totally agree on canned carrots....not great. We use our salsa verde in creamy chicken enchiladas. We don't prefer it on it's own but its great in something. Jams and jellies work great in jam bars for potlucks or parties (or for yoursleves😉) Thank you for sharing your pantry. Mine is very similar and also in several places. I use jelly and jams for cakes. Thin jelly out for what I call poke cake. Poke holes in baked cake and pour thinned warm jelly over the top. Then cool and top w/ whipped topping. Jam in between a layer cake. 🍰

I tend to make a fairly low sugar jam, but I love to use them (especially blueberry) with baked brie. Bake the brie first and just dump the jam on top. One 1/4 pint jar to each small round of cheese. Just serve with some crackers or fresh bread. Makes dinner parties fancy! I also use mine with yogurt, when I don't have fresh fruit. Pre-covid, I'd bring a cornbread to meetings and have a variety of jams, but Zoom meetings just don't work out as well that way!

Well this is probably far over due but I just saw your video. A use for your jam that I used was in corn muffins. We called them jelly belly muffins. Put your corn muffin batter in the muffin pan and put about a tablespoon of jam/jelly on top. When they bake they expand around the jelly, making the belly. “Get in my belly!” Fun to say to kids. Another version is corn bread “cake”. Using a 8x8 or 9x9 pan and make 3 or 4 rows, like planting your garden. These rows go north and south. Spoon jam/jelly in the rows. Then using a butter knife cut square rows going East and west. These are not like the jelly rows just use the knife like you were cutting a cake. Cut right through the jelly rows. Next cut with the butter knife go west to east. It will make a pretty design after several cuts each going the opposite direction. Now bake your corn bread, there will be a nice baked in design on your corn bread. Jiffy cornbread works just fine if time is an issue. Good luck. Hard for me to explain, any questions?

I am working on using up some jams and jellies we found we really like them when I make like a banana or apple sauce bread to mix it in the batter or in muffins or in pancakes. So far the apple butter muffins are a top fav then i used some plumb butter in a loaf of sweet bread and most loved that.

Your pantry is beautiful! I use salsa verde in my instant pot with chicken to make a quick green salsa shredded chicken and my jams get used for oatmeal and quick breads or muffins. I was on the fence about the challenge but I think I’m going to try it, I just need a small budget for dairy, fresh produce, and eggs.

I’m finding the challenge to be quite helpful, I was on the fence too, but it’s forcing me to get out of the mindset of saving my canned good as a bit of a security blanket instead of using everyday as they were intended. It’a also forced me to use things that would otherwise sit unused 😬$30 has been working well for my weekly budget but I’m hoping to lower it! Good luck!!

I just took stock of my freezer in preparation for the challenge. I did it through March last year and as of now that is the plan. I start wanting fresh fruits by the time we get through the winter. I eat my canned fruits during the winter time.

I couldn't agree more. Tomato paste is best purchased! I just purchased a freeze dryer, and I'm nervous that I won't use it enough. Hopefully, I will, but if not, I guess it's good insurance to have should I need to utilize it for a special project. I'm so envious of you having venison! Canning meat is such a lovely convenience. Love your pantry. I went a little nuts with jams n jellies a few years ago. So much to use...my kids made turnovers and poptarts. We used 1 jar for each batch. Loved it! We also made a lot of cobblers.

I think your pantry looks amazing I just found your channel this morning. Please keep up the great work. You can make fruit bars out of your jelly’s and jam. Also drain your apples in juice and make applesauce and I have made cowboy candy BBQ sauce and it was amazing.

Jams can be used in sourdough pastries. Little spoon farm has a pop tart recipe! I like mixing jams with cottage cheese too sometimes.

Also forgot to mention that you can use jelly/jams for rolls. Like cinnamon rolls but with the jam. I Believe amy at little spoon farm also has recipe on that. You can make donuts with filling too 😂

Hello. I've recently found your channel and have been binging. I love it and thank you so much for all your inspiration 😊 If you still have salsa Verde on your shelf.... try mixing one jar with a can of cream of chicken and use as green enchilada sauce! It's a family favorite!

Your pantry looks great! I have the same problem with using jam up. I’ve heard putting it on oatmeal is good. I use it on waffles and in a jam cake. Also jelly roll cookies are great.

You can add the jams and jellies to baked oatmeal, cookies, flavoring in homemade ice creams. Fruit butters added to chicken or pork roasted in the crock pot are quite tasty.

We did mock pineapple and it is delicious. For your jam, if you bake you can make buttercream icing and flavor it with the jams.

Just saw your video and subscribed. I won’t can tomato paste either and when I buy a can I don’t use it all. I’ve started dehydrating tomato skins and when I need paste I just add a little water, easy and no waste. I also canned too many pickles and tried dehydrating and made pickle power. I use in potato salads, chicken salad and pasta salads. I have a friend who likes it in her beer. I don’t like beer so I haven’t tried it.I also need to find ways to use up jams and jellies. Thanks so much for sharing.

Your channel just showed up in my feed today, so I'm a new viewer here. I noticed your secondary pantry had like swinging shelves. I've never seen anything like it before. How easy do you find it to use and is it practical..... I'm very interested as it looks like it could be very space saving in a small kitchen like mine. Here in Australia we have some baked slices (I think you maybe call them bars? ) made with a jam layer... they are yummy! Your pantry tour was great....an excellent working pantry which I love to see! How people organize with the space they have is just great.

I always end up with too much jam too, since we don’t eat a lot of it either. I use some of it, to make candies. They are good as fillings in chocolates and used for making gummies. I also make yeast rolls with jam instead of cinnamon. I also make pop tarts, and other sweet rolls topped with jam too. Those are great for an easy breakfast. Btw, we are doing the challenge too. As I am writing this we have just finished week 5.

Okra pinwheels are a great way to use up pickled okra. It's best with hot pickled okra but still pretty good with regular okra.

I’m very new to canning and gardening. We had a MOUNTAIN of honey delight yellow tomatoes. Searching and finding the only recipe in my Ball book.. honeyed tomato butter I made up a few pints. It’s nice! But a bit strong for just a spread. So I found an apple butter quick bread recipe and adapted it.. I added part of another recipe to add a cream cheese swirl. I can say for the first time in my cooking/baking journey I made my own recipe that people were asking for! I highly recommend turning some of your jams into a quick bread of some form!

If you have any jams made from stone fruit (Peach, apricot, plum) or figs, you can add them to pan drippings for pork to make really yummy pan sauces. I also love jams over yogurt or oatmeal, as others have suggested. I wonder if you could also swirl some of those jellies/ jams into muffin or cake batters before you bake them to give your baked treats a fruity twist. Can't wait to see more from your channel!

You mentioned needing to find ways to use up all your jams and jellies. When my cubbard gets overfilled with these things, I either make BBQ sauce or baked beans with it. My BBQ sauce recipe is simply jelly, mustard, Worcestershire sauce, and ketchup in equal quantities. Heat on stove until blended well, then I continue to cook mine diwn a little in volume. Let it cool, and it thickens up. I usually make using jelly in pints, so it makes a very large amount! My baked beans use this same mixture with navy beans and diced onions. Both of these recipes can be altered to suit your taste. Sometimes, I add onion powder to BBQ sauce. Sometimes, I put diced bell peppers in my baked beans. The various jellies add a nice flavor!

Jams and Jelly: Thumbprint cookies . The filling-in bar cookies. the syrupy ones as a change on Waffles or pancakes. Also a small amount on top of Cottage cheese is delicious. Grape or berry jams are also interesting in a tiny amount served on Scrambled eggs.

I have just found your channel and I loved the tour of your pantry. I also enjoy pantry tours. You canning is absolutley gorgeous!! You can be proud of all you have done. For the jams - I would use the apple butter on top of baked pork chops. Add the last 15 minutes and cover. The jelly - the wine one, maybe mix with meatballs and make it like a BBQ sauce? I subscribed and am now going to check out your potato canning video as those looked amazing.
