when i use the building tool it just gets rid of all the lines and fills the gaps with the purple for no resan

First, the lines need to stick out of the pizza same as in the video. And if you did that, it looks like some kind of bug, try removing the fill color and leavinge it only on stroke then use the shape builder tool.
