Fascinating!!!!! This is the same method that’s used in West African FuFu (when it’s not pounded) and also the same method and corn meal ingredients used in East African Ugali.

Hey! This video is years old and I since don’t use some of those seasonings any more (I’ve cut out anything msg etc) but currently to season fish I use simple seasonings such as salt, black pepper, onion powder, garlic powder, dry thyme leaves, all spice powder and green seasoning.

Is the okra necessary in the fungi? I know it’s used to thicken foods sometimes, is that the case here? I was never big into fungi growing up I have gained a better appreciation for our food as I’ve gotten older but even though okra is one of the foods our people brought over during the slave trade I have never been in to it.

It can definitely be made without it hon (virgin fungi) but okra gives it a nice softness.

Measurements is not something we use in Antiguan cooking. You just know how much to use 😂😂. I like how she cooks without measuring. It shows skill and authenticity. It's not a downfall, Sherika. I cook the same way. Don't ask me about measurements. 😂😂
