Cornmeal-3 cups
Water-(Room temperature)2 ½ cups
Coconut milk- 1/3 cup *Optional you can use water only
Butter- 1 tbs, you can use vegan butter
Pam Butter Flavored Cooking Spray
Salt-to taste
Okra-1 ½ half cup
Add 2 1/2 cups of water and 1/3 cup of coconut milk to a pot and bring to a boil and add freshly chopped or frozen okra. Reduce to medium heat. In a separate bowl combine 3 cups of water and 3 cups of cornmeal, mix well.
Add the cornmeal mixture to the pot and stir. Turn the cornmeal every five minutes to make sure no lumps are formed. You might need to add extra water if the cornmeal is to thick. Cook for 25-30 minutes or until the cornmeal is smooth to taste. During the last 5 minutes of cooking add in the tablespoon of butter. Stir in the butter and remove from heat. Add the cooked cornmeal to a small greased bowl cover and shake until formed into a ball. Plate with your favorite seafood dish and enjoy.
