Because of the high sugar content of the dough in this recipe, the oven breeze will dry it out in no time. It's similar to how easily the icing dries out.

Thank you for your wonderful matcha macarons recipe 💓💓 I have followed your recipe (and the chocolate one) and mostly successful in making macarons but not as beautiful as yours 😢 I have a problem with storing my macarons and wonder if you can tell me the reason: my macarons sometimes become sweaty when I take them out from the fridge 🥺🥺 The top just starts to feel a bit wet. I live in Singapore and it’s usually hot but I don’t always have this problem with my macarons so I really don’t know why it happens sometimes 😨 Hope you can help me solve this problem 🙏🏻 Thank you! 💓💓 Really admire your professional baking skills and you do it so gracefully! 🥰🥰🥰

This is due to temperature differences. If there is a large temperature difference between the refrigerator and room temperature, condensation will occur. Try wrapping it in kitchen paper and putting it in a container.
