I’ve tried this recipe a few times. At first, getting the sugar-water up to temp scared me a bit, but I’ve got a lot better since then. It helps if you know the tempering technique for this, but the key to ensuring that your eggs aren’t scrambled is to pour the water in slowly. As far as any other additional tasting notes, I loved how subtle the sweetness was for these cookies. That said, I like my macarons more on the bigger size, so my yield isn’t as large as the original recipe. All in all, fantastic work! Absolutely delicious.
After months later, watching the video countless times, I made the macaroons and it was hard to get it right! It took me 4 hours to produce edible ones and not perfect! I had had thrown the filling twice before I learned the trick - whisk the 2 egg yolks and hot syrup until it's cold and then add the butter one piece at a time. Result - I found it too sweet and also didn't like the macha in the filling so I substituted with cocoa powder. However everyone loved them (and mother, the queen of cooking) both macha and cocoa and I will continue to make not so perfect macaroons. Thank you very much for sharing the recipe xxxx
