My experience using copper. Never use anything other than copper, stainless, or brass. Never use galvanized. There is a metal chart out there. It shows whats compatible.

Is it possible to separate aluminum and stainless steel with a rubber coating?

Yes. That's one way to do it. Anodization and painting can prevent galvanic corrosion too.
