Hello, Laura! It sounds and looks delicious! Can’t wait to cook it myself! Perhaps tonight... :) I have a comment about the corn starch (not that I never use it, or have anything against it). I’ve come across many Italian sauce recipes before, which call for using “acqua di cottura” to give the sauce a creamy/velvety texture. Acqua di cottura is simply the water used to cook the noodles. Instead of discarding all of the water after the noodles are cooked, some cooks save about 1 cup of water and use it to thicken the sauce, depending on the recipe... I can’t tell for sure if it would change the flavor of this specific recipe you’ve posted, or how it would work in this case, but thought I should mention it, as an alternative in case someone realizes at the last minute that they don’t have any corn starch.

I used the corn starch slurry. It worked great and tasted even better. This recipe makes such a large amount that one tablespoon of cornstarch doesn't affect it. However I know what you're talkin about using the pasta water. I usually do that with a tomato-based sauce.

In case no one else has mentioned it, how to quickly and easily peel garlic: smashy smash it on the counter with the palm of your hand. Okay you dont need to absolutely squish it just kind of flatter. The outside fall off so easily.

You definitely are "wonder woman"! Your cooking looks just as good as your gardening! A tip for peeling garlic...take a clove of garlic, place it on the cutting board, then place a knife on the flat on the clove and hit it with your palm. The clove will break and is now so easy to peel!

There is a garlic press made by Zyliss. You can find it on Amazon. I gave my Pampered Chef the boot when I found this baby. No need to peel garlic clove. Stick it in press and it presses out the clove the same way but keeps the skin. Clean up is amazing with it too. It even has a built in tool cleaner in the handle to remove any left over garlic from holes. But mostly you just pull out the skin after each clove. So much faster. My favorite mew kitchen helper that actually helps the way it should. Great time saver.

Especially in Italian cooking they say never rinse your pasta. You rinse away the starches that help the sauce stick to the pasta. And saving a ladle of pasta water does the same thing.

In addition to not rinsing the pasta, if the plum tomatoes were ripe, they would have made for a thicker sauce without the need for cornstarch. Also seeding the tomatoes would add less liquid.

I am Italian... never ever rinse the pasta. Once you toss it with the sauce it won't stick anyway. Also we do save a ladle or two of the pasta water in case the sauce is too thick. The starch is so important to enhancing the recipe.

Love this Laura. I think it really helps those who were raised on store-bought groceries to see the food grown in a garden, picked and prepared as a meal. Great video that completes the circle farm to table so to speak.

I've done a very similar recipe. Delish! A helpful hint, don t rinse the noodles when drained. They're all sticking together but once placed in the sauce, it will soak it up. You wouldn't have to add starch. Hope that helps!

Great recipe Laura! I made this meal last night and it's amazing. I love your cooking videos every bit as much as your gardening videos :) I agree it's one of the best things to go out into the garden to get fresh ingredients instead of going to a store. Nothing beats fresh ingredients in a meal and they also smell amazing! The onions really do caramelise deliciously by frying them in the sausage dripping and using fresh tomatoes adds so much to the flavour 🍅🍲💚

2 cooking tips here: 1. If you don't want to waste time peeling garlic heads, take your clove chop off the top and the bottom of it, throw it in a container with a lid and give a few good shakes. The garlic peels itself that way. 2. When you boil any kind of pasta (or anything really) add the salt after the water has boiled, before you put in the pasta. That way the water boils faster. Great recipe! Love your channel and love it when you upload videos that are not gardening related every now and then! Have a beautiful day, Laura

Try bird nest spaghetti, look great on plate. Olive oil can cause intestinal issues with sensitivity to olives. Home Goods has some interesting 3D plates for garden dining. Fresh mushrooms add interesting texture, along w/shredded cheeses. Pure grape fruit juice, poured in wine goblets, looks great on table.

Great recipe ! Will be trying it soon. Two tips. Cornstarch works but so does some pasta water. & When pasta is rinsed it holds water if you dont, it will suck up all of that luscious flavor in your sauce!!!

It's not a good idea to wash the noodles. The starchiness adds creaminess. If you add olive oil directly to the cooked noodles this will stop them sticking.

Peregrine Slim I would skip the oil, it actually prevents the sauce from sticking to the cooked noodles. It’s better to add the noodles straight into the sauce once they’re cooked, that way there’s not need of either washing nor adding oil 😊

That’s true, I used to wash my pasta all the time until I saw a food blogger say no washing pasta if you want the sauce to stick!:) this does look like a yummy dish

Always keep some of the pasta water for later. If you have extra noodles leftover that you didn't add directly to the sauce and they are stuck together you can pour the extra pasta water over them and they will instantly separate.

The Italian Grandma way is to add a ladle of the sauce to the cooked pasta. :)

That recipe looked really good and easy to make. I don't have any ripe tomatoes. The ones that I did have have already been eaten. With noodles, I find that they don't need rinsed if I am going to put a sauce over them anyway.

Looks Delish Laura...will have to try that recipe! Little tip, since I know u grow your own garlic, is that u can smash the garlic with the side of your knife and it peels off super easy. Better than fighting with the skins🤷‍♀️

Try smacking the garlic with the flat side of a big kitchen knife before peeling. The skins come right off, so you don't need to fuss with peeling them! It leaves less of a garlic smell on your hands afterward, too.

Hi Laura and Aaron! I'm definitely going to make this (without the peppers, sorry, don't like cooked peppers). I don't have enough tomatoes yet, but will try with canned ones for now. Also, I just want you to know that I made your Strawberry Rhubarb Crunch and took it to my daughters for a "girls" dinner with my sister, too, and it was delicious! My son-in-law liked it, too. The only thing I added was 2 tablespoons of tapioca to the fruit mix and it thickened up perfectly! Yes to more cooking videos please! I would like your recipe for Cashew Chicken, too! This looks delicious! If you take a cup of the pasta water right before dumping it to drain you can add that instead of your slurry. It will also improve the sauce consistency and sticking power.

We’re a vegetarian family, but this looks super good! I’m going to try adding a veggie sausage by Field Roast to modify it to our diet and see how it goes since the rest is pretty veggie friendly ☺️ it feels great to use your own homegrown veggies in meals!

This looks so yummy. Instead of a cornstarch slurry, save your pasta water and add some of that to the sauce instead. The starch from the pasta will do the same thing to help thicken it up, and will add some great flavor!
