Agreed!!! I was so hesitant to try this, and I only did because there was such a steal of a deal on pork steak recently I had nothing to lose. Every time i've been served pork steak in the past it's been bbq'd and grilled and always dry chewy and leathery. THIS WAS SOOOOOOO GOOOD. Savory. Delicous. Melt in your mouth tender. I had no idea pork steaks had such potential.

This recipe is now a favorite in my household. I’m a Foster Mom and when my kids either age out or move on to more permanent placements, I put together a little hand written cook book with some of their favorite meals in it, as well as words of encouragement. That way they have that connection and can continue to create fond memories at their own supper tables. Soaking your pork in a salt water solution is called brining and not really a process for cleaning so much as adding flavor to the meat. There is a legit cellular change that takes place during this process. I do highly recommend it but not because of any special cleaning. It will simply result in juicer, more flavorful meat. Though I’d say soak for 30 min. Good recipe, I enjoyed it.

Lol. Yes pork shoulder blade steaks are amazing, a flavorful and tender cut of pork. I buy them every week now. They are a must on my weekly grocery list. Fortunately, they are still very affordable 😊

This was so good. I usually bake mine with barbecue sauce but I love the herb seasoning and the lemon just pulled it all together. It was easy to make and it came out really tender and flavorful. This went great with Bake Parmesan red potatoes and mix vegetables.

Do you get a similar result as far as tenderness when you bbq yours in the oven? I loved these, and I do like the idea of bbq, but any time someone has put a bbq'd pork steak in front of me it's been a chewy slab of leather that i'm flossing out of my teeth for days. I can see myself maybe baking them like this and then at the very end putting some bbq on and maybe under the broiler for like 5 mins or so.

Just subscribed. Love southern cooking. Grew up in Kentucky, never really paid attention to how my parents/grandparents prepared my favorite meals. Now I cook for my wife and myself and wish I had those good ole southern recipes again. Tried this recipe but with bone-in pork chops and OMG they turned out so well. They were well seasoned and the gravy from the meat was fantastic! I used a little bit of tenderizer because bone-in chops tend to be chewy without it and I used an already made Italian seasoning. This will be my go to from now on when I make pork chops. Great recipe!

I've been following you here for awhile now. However, this is the first recipe of yours that I've tried. When I tell you, this was AAHMAZING, it really was. My husband and my oldest son DO NOT eat pork. The aroma itself and the way it was looked had them wishing that they ate pork 😂😂🤣🤣. However, myself, my sister and my youngest son tore it up. It was so flavorful, juicy and tender. It paired very well with a plain baked potato with the juice from the meat. I am scrolling through your recipes to see what I can make for my husband son since they missed out 😂😂😂😂. Keep doing what you are doing, you are an AMAZING CHEF.

I know I am waaaayyyy behind on this, but I just saw this video. Some people do not consider Virginia to be the "South", but that is where my family is from. My Big Mama, resting in Paradise now, taught all of us to soak all pork in Apple Cider Vinegar (no salt) before cooking. That is what I saw her do, my Mom and all aunts and uncles do. After soaking, you do see the "impurities" in the water. We pour that off and give it a good "gentle scurb rinse." We experiment with different seasoning, but it is always tender and delicious!

Have you considered adding some sauteed mushrooms and perhaps a half cup of dry white wine or cooking sherry?
