My cup measurement :
All purpose flour : 1 cup = 125 grams
Milk/water : 1 cup = 250 ml
Egg substitutes alternative: for one egg :
• 2 tbsp water + 1/2 tsp oil + 1/2 tsp baking powder + 2 tbsp flour. Stir until combined and mix with other ingredients for the dough.
• Flax seeds: 1 tbsp ground flaxseed + 3 tbsp water. Stir and let sit for 15 minutes. (for suitable bread recipe), grain bread.
• 1 tsp baking soda + 1 tbsp white vinegar + 1 tbsp water. Mix into the dough ingredients. (fluffy)
• A half of ripe banana (for suitable flavor)
• ¼ cup of puree fruits (moist): apple, apricot, prunes, avocado, pumpkin (for baking something where the flavor suitable)

Garlic Dinner Rolls (makes 10 pieces)
INGREDIENTS :
1 teaspoon (3g) instant dry yeast = 21g fresh yeast
2 tablespoons (25g) fine granulated sugar
1/2 cup (125 ml) warm milk
1 large egg, whisked
250 grams (2 cups) all-purpose flour
3 tablespoons (42g) soft unsalted butter (margarine work too)
3/4 teaspoon (4g) salt
1/2 teaspoon (1.5 g) garlic powder (or 1 teaspoon fresh minced garlic)
2 tablespoons chopped scallion/parsley
For a larger batch, this recipe might not exactly the same but the result is almost the same as the original garlic bread above.
Garlic Dinner Rolls
2 tsp (7g) instant dry yeast
3-4 tbsp sugar
1 cup (250ml) warm milk. Add a little at a time if you really need more.
2 large eggs, beaten
500g (4 cups) all-purpose flour. per cup = 125 grams.
5 tbsp softened butter/margarine
1 1/2 tsp salt
1 tsp garlic powder/ 2 tsp minced garlic
chopped scallions
1 egg for egg wash
Note for a double recipe :
Use a bigger bowl to mix the ingredients.
Mix the dough until really smooth and soft, maybe more than 5 minutes.
The second proof after shaping (30 minutes) is important to give the dough expand, relax, and plump.
If your dough is too dry please add milk a little at a time until it is soft and loosens.
The butter/margarine is softened (room temperature) NOT melted.
For this larger batch is better to use Kitchen Aid or mixer with a dough hook, stir by hand is possible but will be hard and tired.

This garlic dinner rolls original recipe makes about 10 pieces of small rolls like mine or less if you want to make it a bigger size. The texture was incredibly soft, fluffy, and very delicious from the garlic, scallions, and parsley.
It looks plump but when you press it it will collapse and spring back into shape.
Serve for dinner, for breakfast, as a sandwich, as snacks make the smaller size as an appetizer.
The baking pan must not be square, just use your favorite baking pan, it can be round, rectangle or baking tray, or bundt pan.
The recipe can be double if you want more. But please consider the amount of salt that you are using.
The dough can be kept in the refrigerator overnight or store in the 'freezer plastic bag' and keep in the freezer for a few weeks. Thaw in the refrigerator overnight and about an hour at room temperature before baking time.

@@wongjane8264 based on my own experience, usually for bread, must use bread flour instead of all-purpose flour. it makes a lot of difference.

The bread looked so enticing on the video. Tried it n loved the texture n look. I added sauteed fresh minced garlic instead. Think that was not a good idea as it had a burnt bitter aftertaste on the crust. Will definitely try again, thanks!

Thank you..yes for the baking time as say in this recipe, 180°C or 350°F is the right temperature to get soft texture and brown color. You might set higher with shorter baking time and see how it the texture. .

I love your recipe as it does not require to knead or any equipment. I followed the recipe. The only diff is I use 1.5 eggs as my egg is small (55 gm with shell each). I took much longer than 5 mins to stir the flour. I think I stir more than 15 mins and it still sticky. In any case, I decided to proof it. It did rise nicely after 90 mins, the dough is still very sticky and I am just not able to form a smooth round dough much less able to even roll it on a rolling pin. What went wrong?

Sounds great! The dough is very soft and sticky, stir for 5 minutes and let it rest for 90 minutes. We need flour to handle it with light pressure. If press too hard it will stick of your hands or rolling pin. You did nothing wrong.

After having tried many others in the past, I can confidently say your base dough recipe is by far the best one I've tried. It has the perfect ratio of flour/fat/water--super fluffy and tasty! I'm actually about to bake my second batch now, first one was yesterday

Sarika, self-rising flour contains a baking powder that usually use to make 'quick bread', can not be used as a substitute for yeast for this recipe.

What if my batter was very dry? It wasn’t as soft and giggly as yours when I️ mixed everything together. Should I add more milk ?

HELP!! TRIED THIS TWICE. FIRST TIME WHEN I ADD ED THE FLOUR THE DOUGH WAS DRY..NOT LIKE THE VIDEO SO I AND ED MORE WARM MILK AND CONSTRUCTIVE WAS NOT LIKE VIDEO. SECOND TIME I WEIGHT 250 GMS OF FLOUR AND AND ED IT SLOWLY. DOUGH WAS STICKY.. PUT IN IN MY MIXER WITH DOUGH HOODIE FOR 5 MIN. STILL DID NOT PULL AWAY FROM BOWL. WHAT AM I DO ING WRKNG???

Hello +Dolores, thanks for trying my recipe. This recipe is so easy but many people make it complicated. Your first case is clear : you not follow the recipe. The second is actually nothing wrong, the dough is soft and sticky, please don't panic if it doesn't pull away from bowl. Just continue the process, add little flour to handle the dough and follow the recipe says. It should be fine.

Hello Lakshmi, thank you. Yes, every time we want to bake a bread, we have to preheat the oven to the right temperature as the recipe says. I'm sorry I didn't write it in the recipe because I was assumed that everybody knew it, my mistake :)

You might put the dough overnight in the fridge, the next day, let the dough warm again before baking

Hi Coleen, thank you! Yes the dough can be store in the fridge overnight. To shaping before refrigerated overnight maybe will changed the shape. But you can try it.
