I’m 67, grew up in small town in Indiana. Most relatives were farmers, w/ cooks who made everything from scratch & organic. I Still cook that way…my foundation. I grew up always making rolls. Since family was huge, w/ plenty of relatives stopping by, I had to make tons of rolls. Never put that much sugar, even in all I ever made. However, I always made two types. Regular rolls and what we called ‘caramel rolls’. A bottom pan of a pecan, brown sugar butter base, which were eaten w/ those big country breakfasts & held you over until the big holiday feast. Everybody has their own methods. To shape my rolls, I put dough in my hand & popped them up between my thumb & index finger with buttered hands. Went real fast for those hundreds of rolls I made.

I am 78, so I know what you mean. I was raised in the Deep South by a mother who learned cooking from her mother. It took me quite a few years to make Beef, Vegetable Soup, like my mother, but I finally did. I have passed on the recipe to my girls. My mother showed my wife how to make cornbread dressing and she has passed it on to our girls. The one thing that mother made that I have not been able to replicate is her hoe cake. I know what she made it from and how she cooked it but I have not been able to replicate the taste and feel, yet. I am working on it. It was made with Bisquick and milk, cooked on a cast iron skillet and was about 3/4” thick and had the coloring of a pancake. Put some jelly on it and it was a meal, in its self.
@dawnross644 Жыл бұрын
@@johnclarke6647 I lived in metro Atlanta for 35 years & remember having ‘hoe cakes’ hope same as you described. A Flatbread with ones meal - had it at this restaurant downtown. OMG, the best. My Grandmother fixed hot water cornbread. My Mother rarely fixed it. But, whenever I visited any one of her 7 brothers, they always fixed it. Again, that right touch & skill. Those staples were our life blood. I made beef vegetable soup w/ barley the other day. Hadn’t had it since my Mother made it. It has been divine !! I’ve lost most of these ppl & no family now, and during this time of year, their memory floods my soul. Can’t eat much by myself. But, I’m the freezer queen!! I’m moving back to fixing hm rolls, soups, etc., with food being so expensive & often eating out is an awful experience. I turn on some music from old, pull out those basic staples & make those jewels of my childhood. TY, for sharing your memories & have a wonderful holiday season. Blessings!!

@@dawnross644 Dawn, I grew up in Cobb County and my mother taught school in Cobb County. I remember the days of Rich’s and the Pink Pig and riding the shopper bus between Davidsons and Rich’s. All for a nickel. Try that now. The last time I rode Marta it was over a buck. My youngest daughter lives in Marietta and she won’t even go downtown. It was not like that when I was a boy. I used to ride Southeastern Stages from Atlanta late at night after going to a movie at the Fox.Theater, without having a .45 pistol in my belt. Not any more.

Thankyou Marie! It has been years since I made rolls the old fashioned way. I want to share a story from way back. My mom and I put 2 loaves of bread in her oven (it was off of course, electric oven) and we went to town. When we came home, we checked the bread. The door of the oven was partially open and needless to say we had a mess. Bread dough all over the inside of the oven and stuck to the inside of the oven door, what a mess. We had a hearty laugh but you can bet we didn't do that again. I really enjoy your videos so much.😊

I haven’t read all the comments so someone else may have mentioned this. I am 87 so things were very different when I was a child in elementary school. The glue we used was called paste and was a flour/water mixture, I think it was called library paste. It didn’t actually hold well when we made our construction paper chains, they could break easily. Your warning to soak the bowl brought this to mind.😄

I'm super lazy now so I throw all of the wet ingredients into my bread machine, add the dry, and let it mix in the dough setting. That mixes it, heats it for proofing in the machine, lets it rise all in the one container, and will punch down and let rise again automatically. It will do that for a total of up to 90 minutes. Then I remove the dough and shape to complete the process on the baking sheet. Looking forward to trying these.

Great video! The salt in the butter is a preservative, if you don't use much butter and are concerned, salted butter won't go rancid ás fast. On a related note, of you don't use much dairy milk, if you sprinkle a little salt in when you open it, it'll stay fresh tasting longer. Not enough to taste it, I'm talking less than a teaspoon per quart. If I can get two or three days longer out of a quart, that's a plus... The difference between having gravy (which you're going to add salt to anyway) or not on my biscuits... Or homemade rolls!

Allow room at the top for the rise. If the cling wrap is too tight, it'll inhibit the rise, and the roll will flatten out. But then, variety of shapes is charming, and 'perfection' of appearance isn't what you're going for. Love the recipe.

I'm new to baking, and easily frustrated when I can't figure out what I'm doing wrong. My yeast barely foamed, despite a 2024 expiry date. My mix was a batter, not a sticky dough! I had to add an extra cup flour just to turn it into a wet dough that I could scrape out onto the counter. Then another cup of flour during kneading. I persisted, the dough did rise, and they came out golden from the oven. Beautiful looking and tasting, but definitely more dense than what I imagine they're supposed to be. My husband loved them! But I look forward to practicing this recipe a few times to figure out how to get light and airy rolls. Thanks for your excellent instructions, Marie.

Well I’m so glad to hear the final result was good at least by your husband’s standards 🥰 Did you use the recipe here: mariesaba.com/recipes/easy-dinner-rolls/ Just want to be sure we got the measurements correct because I don’t know what else would explain the batter situation. I’m so proud of you for persisting! Adding flour was the right thing to do - so excellent decisión there! Let’s troubleshoot together so we can figure out what was off 😊 And, as frustrating as it was, making mistakes is how you get better at baking 😅 It’s really the only way to truly learn, so have some patience with yourself and the process. I know you’ll get there ❤️, Marie

I've made rolls before but it's been a long time. I always get a bit anxious because I fear killing the yeast. This method has inspired me and I'm definitely going to try these!! If they turn out like these I'll definitely add them to my Thanksgiving menu. ❤
@marieskitchen Жыл бұрын
Hi Darla! I know the feeling! Yeast can be a little intimidating but if you proof it with the sugar and warm water and see it foam, then you know you’re yeast is good, so that step helps. Good plan to practice a few times before Thanksgiving though 👍🏻 Let me know if you have questions along the way - always happy to help! ❤️, Marie

Thanks for sharing❤️ I made a similar recipe but I baked it in a bread pan and added unsalted butter on top before and after baking. I love making these for Thanksgiving. I let my Kitchenaid do the kneading.

Hi! Thanks for watching! So you made it as one loaf in a bread pan? Someone was asking me about whether you could use this recipe for a loaf instead of rolls. Haven’t tried it yet but now I want to 🥰 Thanks for the inspiration ❤️, Marie

@@rhawknails55 I used a dough hook to knead the dough until it looked like it was ready. Unfortunately, I cannot add a photo of the rolls to this comment.

Hi Marie! To make your rolls a beautiful round shape, put roll on your bench, round out your hand in a cup shap, place your hand over your roll...not pressing down.... now move your arm in small circles (abt 8 circles) but allow the roll to move freely under your cupped hand. You'll end up with perfectly round rolls without having the dough to be tucked on the bottom. Kathryn in Arizona

Marie, I made these rolls for Thanksgiving and they were amazing! I made the dough and rolled them out the night before, so all I had to do was pop them in the oven on Thursday while the turkey was resting. My wife said they were just like the rolls she had as a kid from a local restaurant they used to go to. Everyone loved them, including me! 🙂
@WeeTh3people177611 ай бұрын
This is the comment I was looking for. I was wondering how to go about making them the night before. So do I just complete the whole recipe as she did then instead of putting them in the oven. Just keep the plastic over them and pop them in the fridge??
@PeteRFNY11 ай бұрын
@ChristianJew1 Yes! Just take them out about 20-30 minutes before you plan on putting them in the oven to take the chill off and you should be fine!

Marie…I am new to your channel, and I gotta tell you how much I am learning from you 🎉 If I can make your beautiful dinner rolls, I will feel as if I climbed the Kitchen Mountain of mouth watering deliciousness!!! I swear I could smell and taste your rolls through the camera …😂! You’re super sweet, nice, easy to follow, and a wealth of knowledge in how to make delicious pies/ meals!! Thank you for learning how to do what you do! PS. From one lady to another, my heart goes out to you and your family…our family lost our Mother to Colon Cancer in 2020 (I heard your Mom passed away from Breast Cancer..I am sorry another family had to experience this pain 🎀💗🎀). Well thank you again, and I will let you know how successful my first try at your dinner rolls was. Blessings to you ❤
