Garlic Parmesan Truffle Fries
Our recipe uses fresh russet potatoes. We blanched them in 260 degree oil and refrigerated them, then brought them back to room temperature before cooking them in 350 degree oil to get them nice and crispy.
Our recipe included tossing them in truffle oil, fresh chopped garlic, parmesan cheese and a little salt.
A deep fryer is not necessary for cooking french fries, you can use a wok or a deep pan. We soaked our fries in water overnight to remove the starch and keep them from sticking together during frying.
