Hi Julie-joy. I do like Walker shortbread, as long as it is 'all butter'. This recipe can be made with ground rice instead of semolina too.

@@julie-joywilliams7280 In the UK we can buy ground rice. It is a coarser version of rice flour. The texture is gritty/grainy as opposed to smooth like rice flour. You could make your own by grinding down some rice. Ground rice can also be used to make a smooth version of rice pudding - Stir 100g of ground rice and 1.2 litres of semi-skimmed milk together in a medium sized non-stick saucepan over a medium heat and bring to the boil, stirring continuously. Reduce the heat to low and gently simmer for 10 minutes, stirring regularly. Stir in 25g of caster sugar and serve immediately.

Hi Geoff, another brilliant tutorial, thanks so much……I’m in the UK same as you, I tend to always use Lurpak butter no matter what I make, do you recommend a certain brand or do you have a favourite? I fancy experimenting with butter brands and this recipe would be ideal as a starting point for that…..thanks again, love Jan xxxxx

HI Jan. Thanks very much. These days I tend to use 'own brand' unsalted butter. When I could buy President for £2 for 250g that was what I used. But since the prices have gone up so much(£2.70 for President) I find the 'own brand' which can still be bought for about £2 works very well. Certainly in baking there is no discernible difference. Lurpak has gone up too, though not as much as President it seems.
