Thanks for the new video Georgia! Wondering how to manage ingredients like lemon curd where you need the cake at room temp to enjoy it most which would mean a few hours out of the fridge before eating but lemon curd has egg in it 🙃 Also, do you use frozen or fresh raspberries and any suggestions on quantity. I’ve ordered your book but it’s taking a while all the way here in Aus to arrive!

Hi! It does have egg but it's good so it's okay to be at room temperature for a few hours. If you're in a hot climate I would recommend keeping the cake in the fridge until 1-2 hours before eating. I use frozen raspberries so they hold their shape better but either work!!

This is such a cool technique for a 4” where can I buy the acetate did you have to cut it to size or can you buy it precut

I was told to fill my cakes and then let them settle for 4 hours or more before crumb coating. Is that not necessary?
