There is natural yeast present in grapes skin and in the air. How did you think ppl made wine in ancient times they didnt add yeast they let nature do its job. Unpasteurized grape juice will eventually turn into wine how did you think wine was discovered it was by accident. 10,000 years ago in Georgia ppl used to store grape juice under ground and when they came back to drink it was wine.
@solrac79868 ай бұрын
I know you are right, but they used to save grapes in clay barrel to eat later when all grapes on the harvest were gone. So when they ate all grapes, at the bottom of the clay barrel there were a liquid from the grapes. They drank and liked. And then they start to make juice from grapes making wine. @@mariarahim651

Hello and respect I had an important question I would be grateful if you could guide me I had two hundred kilos of grapes with two empty barrels of 220 liters plus 5 yeasts of 5 grams ec1118 plus 5 yeasts of 5 grams k1. From there, I didn't know if it was possible to mix the yeasts together or not, so I didn't risk it and poured one hundred kilos of grapes into a 220 liter barrel and added 25 grams of ec1118 to it, another hundred kilos of grapes into a barrel of I poured it and added 25 grams of k1 to it. It's been 48 hours now, the fermentation is going on, and I did the oxygenation by stirring twice. But since each barrel is half empty, I am worried that it will get moldy or oxidized. I wanted to know if it is possible to merge two barrels into one?

I have some questions if you like to answer, these questions will help everyone 1. If we can skip egg? 2. Can be use dry yeast instead? 3. What is the alcohol content in 21 days? 4. will the alcohol content increase with increasing days like 5 months or more?
@BryanFazekas Жыл бұрын
1. Egg whites are used as a fining agent (makes the wine clear), especially in wines that are high in tannin. But they are not necessary. 2. Any yeast can be used, although a yeast specific for wine making produces a better result. I use dry yeast that I rehydrate prior to inoculating a batch. 3 & 4. The ABV (alcohol by volume) depends on the amount of sugar in the grapes. Yeast eats sugar and emits alcohol and CO2. Once the yeast runs out of sugar to eat, the production of alcohol stops.
