10:25 In Germany we say - Spaetzle. It is a specialty in southern Germany. Very popular in the Black Forest and Bavaria. You can be very happy because you could try 100% real German cuisine there. Good to know if I should be around. 👍

Fleishkäse is pronounced fly shh kay suh. It literally translates to meat (flesh) cheese. There is no cheese in it but it is sliced like cheese. The mustard called löwensenf is pronounced lou ven sen ph. They have several different ones that range in spiciness. The tubes they come in are also very common in Germany, lots of other condiments come in tubes as well such as ketchup. 🇩🇪 👍

Growing up, I had an uncle that lived in Munich and would send a Christmas Stollen every year to my grandmother. When my grandfather was in the army he was stationed in Wiesbaden and Kaiserslautern. So I grew up on delicious German foods.

Eric this has gotta be about the coolest mealtime Ericsuf6, that I have seen you share with your KZbin audience! Being a foody with an appreciation for Japan's history, it's people, traditions, and most of all it's food. This video was a great example of a chef starting with another country's ingredients and giving it a little twist from Japan. Eric about the beard. The grey in our hair is more than enough to show how father time has blessed us with the simple fact that we have not become room temperature yet. I normally comment half way into the video but I am trying to wait till the end. This has been a great video and I thought this place was really exciting. I loved Germany. My family and I drove to Munich. Got hungry. Stopped at a small town. Didn't speak a lick of English. And the towns local Brewery was in a old castle. Don't remember the name, but the beer was called Carl Steiner. Such a beautiful country.

2:54 - That's a blunderbuss, a muzzle-loading black powder shotgun with a wide trumpeted barrel. Often they have thick barrels made out of brass. The fun thing is that you can load unusual things down them like rock salt and dog turds. I have a 10 gauge brass barreled flintlock blunderbuss and it's fun. Everything looks so delish, I know these dishes but not the combinations. My favorite here is the Spätzle (what they called German pasta) The German Christmas Stollen is actually traditionally baked several months before Christmas, the taste has to get "ripe" with the marzipan, the butter and all dried fruit :) it lasts a looong time and is sooo good.

On my counter, right now, is a jar of sauerkraut in the making. When it’s finished fermenting, I plan on making a nice wurst platter like the one in the video. It should be ready in about 10 days... Excellent description of rotwein... I have a limequat tree in my back yard here in Florida. Mine are not bitter... I often simmer sliced limequats in honey for a delicious marmalade...

Spargel with hollandaise sauce is the best!!! And I think the "1 year old" translation got a bit messed up. It's available once per year in Germany when it's in season. It's served fresh, during a limited time once per year.

Maybe because we don't have them in the states and it's just fascinating. I would definitely love to go to Japan and get some Ramen out of a vending machine and try all the street foods that they have to offer.

OMG Eric, I just looked up eating kumquat skin because I would never have thought that you could. When I googled it one of the first pages that I read said that a friend in Taiwan told them a secret to make a kumquat sweet. It says "squeeze out the juice" "Yes! Believe it or not, a kumquat is the opposite of most citrus fruit: the juice is sour and the skin is sweet." They said that they just nibble the skin on top, then they squeeze out the juice and seeds, pop the rest in their mouth then it is truly sweet as candy. Now I really want to try one!!
