My German husband loves Liepkuchen so this year I will make this ginger cookie. Except finding some spice and orange peels it is not that difficult make. I will try this this week.

The Gingerbread spice recipe is on my blog if you can't find it to buy. There is also a recipe for the orange peel if you need to make them yourself.

Just bought a large tin of German cookies at the commissary. There is Lebkuchen and some I haven’t had before like these little gingerbread puffs dipped in chocolate called durer Brot and these chocolate cookies with sour cherry purée in the center. I bought them for the two tins but I’m loving the cooks well.

I made these a few weeks ago, different name for the recipe, but the same. The first time I made them I did use the little wafers, the second time I did not. They were pretty tasty, then I put them in the fridge for a week and the flavor was really tasty. I used orange and citron the first time, orange and ginger the second time around. I did find the almond meal at our local store, the hazelnut I had to grind my own. I did not refrigerate my dough like you do, turned out okay.

The Oblaten used to be unconsecrated communion wafers, non? There’s a documentary on Amazon Prime Video all about the history of gingerbread. I enjoyed watching it, especially the part where they were in Hungary and the baker made heart-shaped gingerbread that people give to their sweethearts. It’s decorated beautifully and includes a small mirror *to ward off the evil eye* which made me laugh remembering my Hungarian great-grandmother and her ministrations warding off *the evil eye* often. Being only 7 and watching her, I was fully convinced she was a witch. She was sweet, fun-loving and beautiful but a sweet, fun-loving beautiful witch in my mind nevertheless!

It's possible that the Oblaten were unconsecrated communion wafers, but I can't tell for sure. I had to laugh about your description of your great-grandma, though. I can totally picture it and I know some people from Hungary who have a little bit of a witch aura, too ;-) ... in a good way!

Thanks for the video! I have a few questions if you do not mind: 1. How do you tell that cookies are ready when you bake them? 2. Is there a type of cookies that is marzipan with raspberries layer in the middle? Do you have a recipe for that? Although I suppose this is trivial, just make marzipan and put some jam on it, no?
@MyGermanRecipes
@MyGermanRecipes 5 жыл бұрын
Hi Konstantin, About your first question: When the cookies get slightly brown on the sides, I take them out. Cookies continue to bake on their own even after taking them out so this way they get all baked in the center, without baking the sides too much. Question 2: I think you mean what we call “Dominosteine” in Germany. They, too, are a Christmas cookie. They have 3 layers where the fist layer is a soft gingerbread kind of cake, next comes a layer of marzipan and third the layer of jam though it is rather a sort of jelly. The cookies come in a cubic shape and are covered in dark chocolate. I this what you mean? If so, would you mind waiting till next Christmas for a how to video? I will have to research for the recipe and would share it at the end of the year. No-one in this family is willing to eat another Christmas cookie until probably October/November. We’re still stuffed from last Christmas 😆

@@MyGermanRecipes Dominosteine looks like what I was talking about, but I do not know, that is why I asked. It would be very helpful for me if you could make a video on that. I am also interested in any other Christmas confections from Germany, specifically because in your videos you use American ingredients (I am in America too, so I have access only to American ingredients mostly), so the more the better. For example, a recipe of cooked marzipan is something that I could not find. All recipes that I found are just mixing nut flour and syrup, but I heard that some confectioneries cook their own syrup, then add it to nut flour and then cook the mixture again to get marzipan. Thanks again!

Interesting. Are they more of biscuits than bread?
@MyGermanRecipes
@MyGermanRecipes Жыл бұрын
Yey, I think one can say that. They are cookies but very soft with little flour. The word "gingerbread" is more of a loose translation. In Germany we call them "Elisen Lebkuchen".
