Oma taught me to add the mustard to the eggs and whisk them for even distribution, she would also add afew dashes of maggie liquid seasoning or dissolve a maggie cube in water to soak the bread. I often do both liquid and cube as i do love my maggie seasoning, for herbs we use marjoram and parslry. One trick i learned working in kitchens is to use rehydrated dried onions and fresh onions, this can give you some interesting options by choosing to rehydrate with flavoured liquid, such as a use a stock cube to make a stock to rehydrate the onions.

@@Mr.56Goldtop burkhardt mustard is the brand Oma uses, but any good Dijon mustard you enjoy the flavour of is a good sub. I use Coleman's Dijon mustard 2.25kg catering tub, as I now live in the U.K. and getting burkhardt is expensive from specialist online stores hear.

Thank you for sharing your wisdom, Chef! I attempted a similar recipe years ago which included a creamy gravy, and my family still raves about it and calls it "Frikadeller!" As I recall I served it over egg noodles. Wonderful recipe, chef.
