Wouldn’t the tension of the string make the readings vary?

If you over-tension the string it could give you a lower readout. But you'd need to crank down on it to significantly throw off the readings. Some folks will use a clip-on 100-gram weight for consistent tension. I find pulling until it just becomes taut and holding it to the side of the aluminum test fixture with light pressure while I tighten the screw prevents over-tensioning and gives consistent results.

Can one use a kitchen electronic scale with the preloaded clips?

That's certainly an option. I've even seen some jury-rigged setups that have their own test fixture and just use the test media. Using the Edge-on-Up system though has several advantages. For example, it will record on-screen the maximum weight during a test. The central portion under the Text Fixture is the only part that records weight, so you can safely and easily use the Knife Fulcrum. I've tried it on my kitchen scales using the test fixture with it and the Edge-on-Up is just a more convenient and nicer way to go about testing edges.

It's a BESS certified, 0.23mm (.009") diameter wire composed of humidity and temperature-resistant coated polymer plastics.

@@BeeSharp the fulcrum is just for ease of use with long blades. You don’t need to use it, it’s just handy. For chisels or short blades you just press down on the wire

Why wouldn't I just buy the ATF20C Test Fixture for $45.00 and use my kitchen scale? I am not concerned about comparing to certified results just my own.

Are you using monofilament fishing line for test media ? If so which brand ? I am getting ready to do some razor blade testing to understand the conversion factor to Bess media. I can find no data on how the Bess media is tested for certification. Building a rig to limit variables . . . so far I am within +/-5%.
