I think some places do. Its matter of preferences and how you decide to color them. Pickied sakura probably in a powdered form to make the pink and or matcha for the green.

Actually, traditionally yes, they are different flavours! The green is usually made green from 'yomogi' which I just looked up is mugwort? and the pink comes from pickled sakura!!
