Cut into strips. Dredge in seasoned cornflour. Shake off excess flour. Deep fry for a few seconds. Watch closely. They will puff up. Beat any prawn crackers from the Chinese!

Hey, it's probably been said before, but you can make a compound butter pretty easily. Just whack your softened butter, chilli powder (or fresh chopped), chopped garlic and onions (or shallots, a lot more mellow and sweeter), maybe some parsley into a blender, whizz it all up and you're done. If you roll it into a log in clingfilm you can cut slices easily to place on top of your fish. Or melt some down when you're cooking prawns or shellfish. It'll keep for a while in the fridge or ages in the freezer, so you can just make a largeish batch one day and you'll have it ready to make cook ups quicker. Ideal for catch and cooks by the water! You could zest some lemons in there, but they are probable better sliced fresh anyways. Love the content, keep up the good work!

Great to see a couple of Guernsey channels teaming up to bring the action. Sole is a lovely eating fish. Do you ever get the chance to eat halibut? It is my favourite flat fish to eat. It’s to cold here for allergies 😂👍🇨🇦

Thanks Timothy - Halibut don't live in these waters - they live North of here. Some local restaurants have it on their menu but it is imported. Delicious fish though. I follow EIS Alaska and they catch some great Halibut on longlines! All the Best, Tom

Yeh and don’t want it on your face. Believe me I’ve found the hard way squid fishing in Cornwall last year. I got ink right in the chops. Hence too say it made a lovely meal so it was worth it, eating with my still ink covered face in the evening😋😂

Try mixing a teaspoon or Garam Massala, a bit of salt and pepper in oil and brush it over the fish, add chili if you want. Let it soak in for an hour or so and stick it in the oven in a tinfoil pouch. It's lovely.

We catch them a lot in Madeira, quite often in real deep water, over 100mtrs, the small ones don’t fair well and more often than not end up on deck regardless of size. I feel bad about taking small fish, especially when we catch good sized ones also, but I’m not prepared to let anything go to waste! I’d love to get an idea on how long the fish take to get to what we call a respectable size of maybe 10-12 inches…

If you live inland go down to a local fishery as most of them do fishing lessons for beginners same as sea fishing. Plenty of places out there that will teach you🙂👍

Here in texas we got southern flounder. I wish I could taste sole so I could compare the two, I've had halibut, it's just a bigger flounder lol.
