Herbal Medicine Ingredients : Herbal medicine ingredients are not only eaten for special diseases or health, but are also often used for general home cooking. For example, as ingredients for Samgye-tang, Mulberry, Tree Aralia, Eleutherococcus Sessiliflorus, Mongolian Milkvetch, Korean Angelica, Ginger, Jujube and Korean Ginseng are used. 7. Namul : South Korea is the country that eats the most dishes made with only vegetables without meat and seafood protein. Namul are foods made with one edible plant as the main ingredient. Examples of the types of Namul include Shepherd's Purse, Stringy Stonecrop, Korean Angelica-tree, Korean Wild Chive, Butterbur, Bracken, Doellingeria Scabra, Bamboo Shoot, Chamnamul and Cirsium Setidens. // Etc... Korea shows a distinctly different food culture from neighboring countries in Far East Asia (China, Mongolia, Vietnam, Japan).

this video is really impressive! i love how detailed the kimchi-making process is shown. however, i can’t help but think that mass production might take away some of the traditional aspects and unique flavors that small batch kimchi offers. what do you all think?

I really enjoyed this video! The way the Kimchi is made in such a huge factory is fascinating. But honestly, I can't help but wonder if the mass production takes away from the traditional methods that make Kimchi special. It's like, does more efficiency mean less authenticity? Just a thought!

The Kimchi is packed into plastic bags right after the cabbage gets mixed with the red paste. When does the fermentation happen ? Do they ferment the cabbage and the sauce separately ?

Is there a reason why the Kimchi was Marinated as a whole and nut cut into pieces at that step already? That would make the whole process a lot less labour intensive.

If you store it as whole kimchi, it won't sour quickly, and you can store it longer and more deliciously

All the comments above are correct but not the main reason. The main reason why it's not chopped is because depending on how you eat, the sizes change. Let's say if you eat kimchi as just side for main meals like rice, soup, or ramen, you chop it small (this is the most common way, and you probably thought about this). If you eat food like steamed pork, AKA bossam, you cut it in big pieces. It's like a cheese. They ferment it as whole piece and chop or shred after.
