When I saw a bottle of Knudsen pure tart cherry juice in the refrigerator, I felt compelled to make this. I rehydrated ,overnight, a blend of craisins/raisins (2/1) in the cherry juice, shot of brandy, sugar, corn starch, and 1/2 teaspoon of almond extract, which provides the decidedly cherry pie flavor to all baked things "cherry." Delicious results and a compelling facsimile to sincere cherry pie - in flavor, although texturally different, but unimportant. Julie is correct when she noted that raisins are rich to flavor and body.

A bit of Almond Extract, 1/4 tsp, is common in cherry pie recipes. The pie dough trimmings in our house are always baked on a cookie sheet with a cinnamon and sugar sprinkle.

I was making a cherry pie last year out of frozen cherries and thought I had two bags when I only had one. Whoops. Not wanting the crust to go to waste I decided to throw in a bag of frozen cranberries and some extra sugar. It was delicious!!! Now I add cranberries whenever I make a cherry pie. I love sweet and sour things and the cranberries add a bit of tart zing to the pie and actually seem to amplify the cherry flavor. I guess we should have know this, having grown up on things like Ocean Spray Cran-Cherry drink.

Glen, I discovered your channel last fall but as I'm pushing 70 it takes me forever to learn how to do all these computer dances. So I can now move to the subscribe, like and comment beat. I've been cooking since I was 12 inspired by our beloved Julia Child on PBS TV. Since then I've expanded into world cooking and love to see what substitutes I can do for things that might not be at hand. I love cherries and they do pop up in Oaxaca (where I've been since 1986) occasionally. But I love raisins And Cranberries (which also appear). I think this combo would work well on an upside down cake (without the liquid and more butter) The 1922 cookbook and comparison with others was informative. Keep up the good work CHEERS JIM

Looks great. Cranberry Pie is something that I’ll probably really like, but I’d never heard of any before. Raisins adding richness to the very tart cranberries makes a lot of sense. I wonder if the reason cranberry pie never really entered the imagination is that folks were thinking of it as a substitute for cherries (thus superfluous once seasonal scarcity subsided), rather than a worthy pie in its own right.

Funny you should film this recipe for today because I was thinking of sending you a recipe earlier this week called Mock Apple Pie. My SIL gave me the recipe for the mock apple. When visiting them last fall she sent me home with some of their garden produce which included a 3-4 lb zucchini. The recipe is for those overgrown zucchini. Surprisingly enough, because of the seasoning & texture, it does taste like an apple pie.
