Potato flour alone lacks gluten, which is essential for bread rising and reducing oil absorption. Consider mixing your potato flour with gluten-containing flour (like wheat flour) or use gluten substitutes like xanthan gum for a gluten-free version. Suggested mix: 70% wheat flour, 30% potato flour for bread or fried items. Incorporate vital wheat gluten if gluten-free isn’t a priority. If it is, use xanthan gum or psyllium husk as a binder to improve structure and elasticity in your dough.

I'm sorry, but why did you bother to blanch the potatoes before you started drying them? The usual reason is to make your dried thing last longer, but when you take them out of the dehydrator while they're still wet enough that most of them are sticking together, your flour's going to be *much* too wet to stay viable for very long at all.

Blanching prevents the potatoes from discolouring. No, the dried potatoes taken out from the dehydrator were not wet but thoroughly dried. You might want to consider watching the video again and read the subtitles attached.
