You can try blanching the potato in warm water (45-50°C) for about 5 minutes after peeling next time. This will prevent the oxidative discolouration that occurred during dehydration. Cool in cool running water right after blanching so the potato doesn’t get cooked.

All the methods are great but I really like the one you used citric acid. The one you used lime juice is also good too, the blender did a great job but try not to use it on things like dried corn or beans those will give the blender scratches, waiting for the next video NG 😍❤️

Saw someone else using the blender to powder up dried veggies, and she said you should always start off the blending by using the pulse option first; otherwise will burn out your blender motor. Thank you for showing how to make the potato flour.

the dark color on potatoes is just oxidation....as you say not harmful at all...for those of you who want to know why it is dark....it's just the potatoe being exposed to air.

I was always told a little lemon juice to keep the potato from changing color but we use lemon juice for a lot of canning for freshness and color.
